This is amazing and not that expensive considering the quality of the food and especially the quality of the service. The chef is devoting 100% of his time to two guests only! One thing to improve though: I would expect a better knife with this beef even if one almost does not need a knife to cut it.

What I notice on all these videos is that the Japanese guys cook the steak completely opposite of what they do in Europe/USA. They always start it slow, instead of throwing it on a searing hot surface.

Because wagyu has so much fat, it needs to be rendered some. If you have it too hot, it will burn/overcook the meat before all the fat renders. So it's more about the type of meat than it is location!

Watched many of these relaxing videos and this one has two unusual things: cheese, can’t think of any Japanese or even Asian dish that uses it. Forks and knives, chef didn’t cut the Wagyu into bite size strips which is a little disappointing as neat to see perfect slices done effortlessly 😎
