I love watching these kinds of videos because they are usually quieter, with the owners/ chefs usually not very talkative and just focused on their work. It's so nice to see this gentleman who looks so happy with what he does and so cheerfully chatting with you.

Agreed! I worked in restaurant kitchens for 13yrs and it was always controlled chaos. Watching all of these folks just made me realise I should've moved there before I left the industry.
Honestly wish that the restaurants around me had even half the amount of dedication and love poured into their craft as these wonderful people. All I have around me are restaurants and owners caring more about how much more they can charge for their mediocre food than improving their craft and caring about customers.

Most Japan restaurants develop products and services in an attempt to serve more than they cost. Otherwise, that restaurant would go out of business. It is said that 70% of newly opened restaurants in Japan close within three years.
