Hi from Michigan, USA, just found your channel. Had planned my dinner already for later (boring frozen meal w/extra veggies), but now I'm going to head into the pantry & and grab a can of tuna & whatever else sounds good. Have been stuck at home for 3 months. Where I live has been a hot zone for the Covid virus. Have a favorite Sushi restaurant three minutes from where I live and haven't been able to go there in three months. After trying both canned tuna in oil and canned tuna in water, I have to say that oil is the superior choice. The reason canned tuna in water stinks more, is because of the metal. The cooked tuna on its own has a mild to moderate odor, but the odor of the metal is actually stronger, and actually gets amplified by getting mixed into the water. The water also enables the fish odor to get absorbed into the metal, so even after you empty the can and wash it with water alone, the combined odor of the fish and metal remains. With oil, the oil absorbs the flavor of whichever fish it is sitting with, but the oil actually does not absorb any of the metal odor. As such, the oil actually serves as a protective coating to prevent the metal odor from seeping into the fish. For people with health concerns and questions about fat content, you will be pleased to know that tuna actually has no fat of its own. None. As a result, the only source of fat in oil-packed tuna, is the oil. The cheapest tuna cans use soybean oil, and you have to pay more for tuna packed in olive oil. But, both soybean and olive oil are primarily unsaturated fats, and both are relatively good for your health. When consumed in moderation of course. To prevent any health risks, I recommend switching from frying/deep frying to sauteeing. For those who do not know, frying is cooking a food while it is fully suberged in an oil, and sauteeing is cooking a food with only a thin layer of oil covering the pan.

I love the way you do the recipes: you show the ingredients, and then while preparing them, you're explaining the amounts, etc but not in real time (in other words, it's sped up a bit). I don't have the patience to watch when people do a cooking video all in real time, it just takes too long and I just don't have the attention span, lol. This way is quicker but also very clear. Great job!

Tuna melt is one of my go to dishes. Mix in a bowl tuna with mayo, season with italian seasoning, black pepper. Assemble sandwich by putting 2 Tbsp of tuna mix on one slice of bread, add slice of pepper jack, sharp cheddar or your fave sliced cheese place other slice on top and prep you pan. Use butter or oil to coat pan and heat on medium high. Place sandwich in pan, cook until toasted and flip carefully to opposite side and toast also. I love mine toasty where it has some crunch. Also don't do "American cheese" slices. A yummy go-to dish that pairs well with chicken noodle soup or tomato soup. Enjoyed this episode of your show and several others! Thank you!

great video! it's the first one of yours that's shown up on my feed and i'll definitely be watching more. i have a couple tuna tips: first, if you hate celery like me, use diced cucumber instead in the tuna salad. equally refreshing and crunchy :) second, my favorite super easy canned tuna recipe is chamchijeon, or korean tuna pancakes. mix a ratio of 1 can drained and flaked tuna, 1 egg, 1 clove minced garlic, and 1 tablespoon of flour. very easy to double or more if you need to feed a crowd. add whatever veg you like, i just do diced green onions but you could use regular onions, carrots, etc too. pan fry heaping spoonfuls with a little oil until golden brown and crispy on both sides. that's it! sriracha mayo is the perfect dipping sauce, and if you add rice and sigeumchi namul you have a perfect easy meal.

my go to tuna dish is tuna noodle casserole. It is the easiest thing to throw together and feeds a crowd of people. 2 cans of solid white tuna, drained, 2 cups of egg noodles, I prefer the small to medium size ones but you can use the wide ones as well. 2 small cans cream of mushroom soup or 1 large family size and 1 bag frozen peas, thawed and boiled for 1-2 minutes. Cook the noodles, drain them and mix everything together in a bowl, Place in casserole dish that has been sprayed with cooking spray, top with panko bread crumbs and bake 350 for 30-40 minutes. I usually take it out of the oven when it is bubbling around the edges, which is about 30 minutes, but it all depends on your oven

My mom used to make something she called "tuna boats" - these were twice baked potatoes with tuna in the mix - they sprang to mind when you made the tuna fishcakes. I also learned to make tuna noodle casserole: basically just a white sauce with mushrooms, onions & cheese - some people add peas. It can be served right off the stove or baked with a crunchy topping on top. We always topped it with crushed potato chips. Thanks for the new ideas!

There is a cheese at coles in the deli or special cheeses section called mini chol. It is a soy cheese and it melts really well and tastes really good. It’s from Sweden and costs about $10 for a block that you will need to grate which takes no time at all. Cheers ✌️

My favorite thing with canned tuna is to drain it and add it to my box of macaroni and cheese. For extra creaminess, I add a slice of Velveta or Kraft American cheese to the combination until all is melted together. Add a sprinkle of fresh ground pepper. It’s sooo good!

Hi Janice, I've watched several of your videos and your struggle with lactose intolerance. I'm lactose intolerant also. Fortunately it is only the primary dairy products, e.g., milk, ice cream, yogurt, etc. that affect me. Cheeses do not affect me. But I'm curious, have you tried a lactase enzyme supplement? It works well for me.

Janice Fung: You may want to try aged cheese, which loses pretty much all of it's lactose during the aging process. I am highly lactose intolerant and cheese that has aged for more than 6-8 months works perfectly for me. Vintage Cheddar, aged Parmesan or aged Swiss Gruyère should also be available in Australia. Give it a try!

For the potato/tuna cakes, put some panko on them, that will help with the texture. I don't usually go for canned tuna except for the occasional tuna sandwich, but I did have a tuna sushi roll at Hong Kong Disney that was pretty good.

@@JaniceFung When making Tuna/Pasta Salad I tend to add Mayonnaise rather that a Salad Dressing. The Tuna Cakes I would probably Egg Wash and Bread Crumb a couple of times before frying. Tuna Sandwiches I always made/make fresh (Never took them to School, With Diced Cucumber and Mayo. The other way I eat Tuna is cold mixed with Mayo and Mustard on a Baked Potato. As for the Vegan Cheese the packet said Pizza Cheese? When making normal Pizza they use a couple of Cheeses, Mozzarella not for taste but actually because when melted it stretches as you take a slice, So try a Named Cheese substitute like Cheddar or Monterey Jack as these are used for flavour?

If your oven has a broiler button then you can broil the dish for just a a minute or so to melt the cheese on top. Also, in my family we often made tuna fish sandwiches using the drained tuna, tart (dill)-pickle relish (some use sweet and some use the tart but, I prefer the tart), regular Kraft Mayo, chopped up hard boiled egg, yellow onion, celery optional, and sometimes put raisins either in it or on the side, and serve it with lettuce and tomato on raisin bread. I am a celiac so I use gluten-free raisin bread for my sandwiches. They're very good. I've had none-celiacs really like them, as well. The contrast between the tart (dill) pickle relish and the sweet raisins makes it taste really good. Try it sometime. I think you might like it. I have not used any of your asian products before but, if they're gluten free and safe for me I certainly will be trying them now. I love all kinds of food and flavors. Thank you for sharing!. To make your tuna fish cakes crispy, use freshly grated potatoes instead of boiled mashed potatoes. Add 2 tbsp potato or corn flour. All the rest is the same.

To get a crunchier coating on your fishcakes you could dip them into 1 flour 2 beaten egg 3 panko breadcrumbs before frying. Also Liddells make a number of lactose free dairy products available in Woolies. Their products are better than the vegan cheeses.

For the Tuna Fish to make it a bit crisper you can add some bread crumbs, plus for bit extra flavour you can grate up some tasty cheese and add to the mix (not great for lactose intolerance, but helps with flavour). Also another quick simple tuna dish is get a can of tuna, then add to cooked plain steamed rice add half a jar of pasta sauce, plus pepper for flavour and mix well until is all mixed together, then put some in bowl and eat. A final quick tuna dish is simply boil up two packets of "Indo Mee" Mee Gorang instant noodles drain-off the water then add instant noodle flavour sachets and mix thoroughly and finally add the can of Tuna to noodles again mix thoroughly and eat.

It is hard to get melty vegan cheese. Worth exploring some of the vegan food-review sites where they can tell you these things. You can also make a nice crunchy mix of breadcrumbs, ground almond, herbs, seasoning, some vegan cheese *finely* grated, or you can get vagan 'parmesan', some nutritional yeast, a bit of oil. Sprinkle, bake! Not melty, but tasty.

Vegan cheese is a bit tricky to work with because it doesn’t seem to melt well. Perhaps try putting the cheese in the pasta mix and topping it with breadcrumbs. It might get you the crust you’re looking for without the unappetising cheese topping. For the tuna & potato cakes may I suggest cutting the potatoes into large cubes before boiling? They’ll cook quicker and be easier to mash than a whole potato. Also, coating the tuna fish cakes in breadcrumbs before frying them will give them the crispy outside you’re looking for.

I am so enjoying the inspiration for cooking from your recipes, Janice! Oh, had another thought - with your vegan cheese you could try broiling it and see if it would melt well that way. To make the fish cakes more crispy on the outside, after making the patty dip into bowl of pinko breadcrumbs. Also when boiling potatoes you should always put the potatoes in cold salted water to begin the cooking.

Mexican tuna salad : ingredients chopped fresh tomatoes, chopped purple onion , chopped lettuce , fresh corn kettle in a can drained , chopped cucumber optional : fresh jalapeño if available . Mayonnaise and a squeeze of fresh lemon 🍋 we usually eat this with saltine crackers or Mexican tostadas !

you can make tuna curry with gravy, you can also cook tuna with brinjal, put some indian masalas like red chilly powder, yellow powder, pepper, salt and lil tomato sauce and cook the tuna along with the brinjal...or and some vege masala... its good...for seasoning you can add the mustard seeds in the beginning to splutter and at the end either coriandor leaf, or curry leaf or the long green spring onions.... secondly you can cook tuna with tapioca once its soft and mix them up and put your selection of masalas.... you can make tuna cutlets similar to your patties....you can also use it as a filling in chappatis or dosas etc or even iddlis and fry them and the list goes endless for tuna receipes
