Plural is squashes and I love me some. Every time I roast them I end up just snacking on them as if I were snacking on melon and they never make it into another dish. Goals.

You've gotta try it! It works really well for these smaller pasta shapes like shells or penne, and also make sure you're near a vent because with the quick release you're likely to get some spray! I usually just turn the valve on and off while it does that, but I still need to "mop up" with a kitchen rag afterwards. 😂😂 But the convenience of cooking a whole bag all at once without waiting for water to boil and then watching over it is well worth it! Also, cooking squash is super easy too. That's actually why I love to roast them first... I find roasting to be the easiest method. 😆😆 Just cut lengthwise & bake at 400F. 😁 And you're very welcome! 💕🌱

I keep that tofu scramble mix on hand in my pantry all the time! (Sam’s from It doesn’t taste like chicken) So good and easy. I sometimes add a splash of plant based milk to it when cooking too, to make it a bit creamy.

These recipes look delicious! Thank you for sharing. Faith at The Conscientious Eater blog has a good sweet potato brownie recipe that's not wet and is fudgy and delicious. I sub the oil for applesauce and they still turn out great.

Kabocha is not available where I live either. I’ve gotten it a couple times at a big international market I go to about 3 hours away. 🙁

The skin on the kabocha squash is traditionally eaten, actually soft and taste good. This is coming from someone who doesn't like the skin on butternut squash
