Just want to point out that although Xin Rong Ji's branch in Chengdu has a Sichuanese twist on some of the dishes, the food served there is still primarily Taizhou cuisine which, like Cantonese cuisine, focuses on highlighting the natural flavour of the ingredients, with less seasoning and heavy sauces than Sichuanese cuisine.

The fish in the second clip looks PERFECTLY cooked. 3, 2, 1.....blastoff! Blows your head off with the peppers but looks delicious! 🤤 BTW, the second restaurant looked the best, to me.
