I'm using this recipe to make Blue Cheese dressing and I have come up with a procedure that makes my life a little easier, and I thought I would share it. 1. Buy some wide mouth 16 oz mason jars 2,. Pour one cup of heavy cream into the mason jar and mark the jar with a sharpie - never dirty a measuring cup again. Or just use the 1 cup mark built into the mason jar if you trust that to be accurate. 3. Add salt and pepper to taste and 2 tsp of vinegar 4. Put lid on and shake till frothy - Never dirty a bowl or whisk again 5. Add ½ a blue cheese container 6. Use a stick blender to break up the blue cheese and mix it with the cream. Stop when you get to your desired thickness 7. Pour in remaining blue cheese and stir in with a tablespoon. You may need to do this in small batches to make sure it all fits. 8. Put lid on and toss in the fridge. Way less stuff to clean up. And to clean the blender... Put a glass in the sink. Add dish soap and hot water. Run the immersion blender on high for 30 seconds to clean the inside where the blades are. Pull it out and wash the outside with a soapy sponge. Rinse off and throw in dish rack to dry.

I'm as old as dirt - and my mother ALWAYS made cream/vinegar dressing for both cucumber salad (cukes from the garden, of course) and garden lettuce salad. It was on the menu almost every single night during the summer. Now why I never thought to try that mixture on my daily salad, I do not know! Thanks for bringing this back out of my old memory bank!

Milk + lemon juice is a way to make sour cream or buttermilk, so using heavy whipping cream + vinegar is basically the same thing - only thicker; especially if you refrigerate it overnight. The process that this uses is called 'clabbering'.

I stopped eating salad because of the salad dressings out there on the market (even the Keto ones). The dressing recipes I've tried from Keto youtubers in the past were just too much, but as soon as I saw this video, I made the Ranch version just using the herbs I already had in my pantry. Honestly, the best salad dressing I've ever had, so easy and quick! This is literally an answer to my prayer! Thank you so much for all the work you do to share your recipes, tips and tricks. GreenEyes- Hollandaise is my go-to flavor indulgence while eating keto. I make a batch, freeze it in an ice cube tray and use the blocks one at a time on eggs, steak, veggies, quiche, or whatever I want to sauce it up. They melt so quickly. A quick stir in a small dish after a minute in warm water to soften and it is good to go! Yumm!

The best recipe, actually an idea, that I ever got from Jacques Pepin was what he calls "Fridge Soup." Whenever you stand in front of your open refrigerator trying to decide what to make for a meal, and you find small amounts of lots of leftovers like cooked meat, cooked veggies, raw veggies that are going to go bad if you don't use them soon, and salad greens, etc., take every thing out and dice it into bite-sized pieces. Put it all into a pot with whatever broth or stock you have. If you have none, add water and some bouillon cubes/packets. Add whatever dried spices you want, such as oregano, basil, thyme, salt, pepper. Bring to a simmer and cook until the raw veggies are tender. Taste for seasoning and adjust. There you have it---Fridge Soup! Genius! This is a super way to use up all of your leftovers, and you can call it "high cuisine" because the technique comes from such a respected chef as Jacques Pepin!

I didn’t have a wisk on hand so while I was out I grabbed one of those mixer cups. The one like people make those health shakes in. Put in the whipping cream, gave it a good few shakes. Sprinkled a little salt, then the white wine vinegar. Gave the shaker cup a few shakes, the cream thickened. I opened the shaker added some ranch seasoning. Again gave it a few shakes. I ended up with the thickest, most delicious salad dressing I’ve ever made. Taste better than the restaurant kind or any store brand I’ve had. I can not wait to try all kinds of spices using this recipe. Plus it’s simple ingredients, with none of those bad additives like the store brands. Possibilities are endless with this simple recipe. Watching this at work. I'm going to go home and try it with Balsamic Vinegar. I'm either going to wretch or squirm in delight. Can't wait to find out which. Thanks Steve ~

I can’t thank you enough for this recipe!!! I just made your base dressing - tasted awesome - and while I am a die-hard Ranch dressing kind of gal, I didn’t have everything so I added a sprinkle of Trader Joe’s 21 Seasoning Salute. Oh my!!! I love that it is not as thick as store-bought dressing, because I use a lot less dressing, I know it’s made with all healthy ingredients, and the flavor possibilities are endless. Thank you thank you thank you!!!

Made the dressing last night for our salad. It was so easy and delicious. My husband really liked it. I had some Dak’s Ranch seasoning to put in it. Plus I used about 2 tsp of red wine vinegar. Simple, easy and clean dressing. Thanks Steve.

I bought a complete set of Jacque Pepin cooking videos from our library as they were scaling down their inventory. Great Purchase! I've learned so much. The sad thing is that this particular set did not make it to digital format. I'm hoping to take these VHS and convert them someday so it won't be lost. My VCR started eating tapes soon after I got them so I've not transferred them yet till I can find a reliable vhs player . Thanks for this quick and simple Salad Dressing. I've had a bad experience trying to make a homemade blue cheese dressing. This seems a great way to start without "wasting" a lot of ingredients. I always have Heavy whipping cream around.

I make my own blue cheese dressing with whole fat buttermilk, sour cream, onion powder, garlic powder, salt, pepper and of course blue cheese. It's sooo delicious. Better than any store bought. I'll have to try your recipe with the heavy cream.
