Curious; do they still make the instant mix where you only need water? I haven't seen it in stores in years, only the one you need an egg for.

@@InTheKitchenWithMommaMel I used to live off that instant kind when I was single, I never had eggs left in the fridge and instant was easy to keep in the cabinet. I'd get home from work make instant cornbread and instant potatoes and go hit the local bar with friends then hit McD's on the way home and start over the next day, and pig out on weekends at a buffet. That was 30 yrs ago, Now I have to cook for my wife and kids, they refuse to eat her cooking unless it's a pie or cake. Just made 5LBs of tacos an hour ago, be lucky if there's enough for 3 more left.

My best kept secret for having green Bell pepper, and all the other colors, is to dice up the peppers and put them in zip lock bags. Toss the diced pepper into your freezer and always have that wonderful ingredient available on short notice. I do this with onions too. The really nice surprise is that the frozen vegetables are never crunchy in your recipe. If crunchy is what you want , use only fresh.
@Scorpio_Rose1980 Жыл бұрын
I love when the grocery store has these peppers on sale. I always stick up and freeze them. Cut for stuffed peppers, diced, or sliced. No matter how I'm going to use them I always have several bags in my freezer if fresh peppers, onions, tomatoes. Etc ..... ❤️🌹❤️

Grew up with Jiffy cake mixes back to the 70s. When parents were out for the weekend night at friends for cards or church event, and there weren't other snacks left, I would make a chocolate cake from a single Jiffy box in a single round cake pan. Eat it warm, no frosting out of the oven. 😊😊

Thanks for sharing that sweet memory. Back in the 70s, I discovered Jiffy Mix as a college student, hundreds of miles from home. Those little cake mixes were perfect for baking up in the dorm kitchen, and sharing with roomie, and maybe a friend or two. Happy times.

Can hardly find the cake mix or pizza dough any longer. I do find the cornbread and the biscuit mixes.
@OrlaQuirk Жыл бұрын
@@childofgod3675 Eventually I couldn't find the jiffy mix pizza dough, nor the Ragu brand. I ended up learning to make my own pizza dough. A friend suggested using the Joy of Cooking pizza dough recipe. After I moved from Texas to Michigan, I had to use a styrofoam box, warmed up with corn or rice bags, to raise the dough. Picnic cooler works, too. In Texas, for most of the year, I could put the dough in the garage, on top of the washer or dryer, to rise. The sun did the rest.

@@childofgod3675 The great thing about making pizza is that it's essentially a flatbread, and you don't have to worry if it puffs up enough. So it's much easier than a loaf of bread to make.

Mel, I'm not a very good cook but I love to make casserole dishes for supper. I started watching your videos a couple of months ago and just love everything I watch you fix. So far I've made one of your pasta bake dishes and really enjoyed it and from this video I made the chicken and cornbread casserole and my husband and I both liked it. The next thing I'm going to try is the sloppy joe cornbread bake and after that probably one of your chicken dishes. I retired about 2 1/2 years ago and before that my husband did most of the cooking during the week because he would get home 2 hours before me and start making something. I loved it because he would cook and I would clean up - - pretty good system. However, after I retired it became my job to cook full time, because he's still working, so I started cooking but as you know I quickly went through my normal recipes and was getting tired of repeating the same meals. I started turning to You Tube looking for new things to fix and low and behold I came upon your videos. What a game changer because you are constantly coming up with new ideas and not only that but I really enjoy watching you cook for your family and seeing y'all go on vacation and the adventures that your family has. Thank you for putting in the time and effort to share these recipes with all of us! You are making a difference and helping us out along the way. God Bless and Happy Cooking!! It must have been okay, the 'toddler' is a dad with his own toddler now. New sub.

Add 1-2 sticks of butter (yup, here’s the richness lol) and mix up. Add steamed cauliflower, s&p and mix up again. Top with mozzarella cheese and bake until melted. It’s soooo good and creamy! I made the 'Hamburger Skillet Pie' last night...scrumptious for a chilly Spring night. I used an oven-proof, stainless steel skillet instead of cast iron, for a one-pot meal. I refuse to buy eggs at these inflated prices ($5-7/dozen!), so I made a "flaxseed meal egg" for the Jiffy mix. Couldn't tell the difference. (1 egg=1 tablespoon Flaxseed meal + 2 1/2 tablespoons water. Mix & let sit maybe 15 minutes until it thickens). I forgot to add shredded cheese to the Jiffy mix, so I sprinkled the cheese on top of the pie before popping it in the oven. You're right, this is easy & versatile! Thank you.

Hi Mel! You have reminded me of my younger years and (my now adult) children’s favorite meals. Your meat pie recipe has been in my family for as long as I can remember. We just called it “beans and meat.” Also it has to be served with Mac and cheese! Such a great classic recipe! The only thing I do different is add a little Worcestershire sauce. I can’t wait to try the Tex-mex recipe. Thank you so much for sharing!

My late husband used to make a dish similar to this. He used Ranch-Style beans instead of pintos and he didnt use tomatoes though. We named it Papas Cowboy Beans. He always made a double batch. One time he made it but by mistake he added banana nut muffin mix instead of 2 boxes of cornmeal mix. It didnt taste bad at all, but you could taste the banana nut flavor. We never make it now without someone offering a reminder not to use banana nut muffin mix and we all have a giggle.

I grew up on Jiffy cornbread, like many people I know. I certainly remember the paper packaging folded over in the box, I feel like that was a fairly recent change. But maybe not, guess I’m getting old! Thank you for sharing these recipes. Can’t wait to try them!
