Kimchi (or paocai) and any of the Japanese nebaneba foods (yamaimo, natto, raw egg) are excellent especially over rice :) okra and mountain veggies like bamboo shoots too

Asian stores usually have them. If you have a China town near by, the grocery there definitely will have them. You can also shop online on Asian stores. There is a new on called Weee. I haven't shopped with them, but they seem to have everything.

The bird's nest is actually from the saliva of the swallo (bird) the best is the nest with blood . The swallo vomited so hard that they actually die to make her nest. They are mostly found in the high cliff of Indonesia.

The "barley" in question is known in America as Job's Tears. It's gluten free. :9 Bird's nest is bird spit. I'll stick to white fungus. XD
