I would really have liked a glass jugg to be able to see better what was going on... eeeeh.. I would have liked to have you showing me in person! this is really challenging on my own... Had al lot of espresso an cappucino in Italy this year which gave me the motivation to pick this up back home in the Netherlands.. ps.. your video's are really great!

I kept trying all these different coffees that said "watermelon! peach! plum! jasmine! vanilla! chocolate!" and they all just tasted like different coffees to me, not like any of those other things! I thought maybe I could bring out those flavour notes if I got better at dialing in my espresso! Now I don't feel so bad that my espresso tastes like coffee. Thank you so much!

Problems with dialing in because you don‘t know what espresso‘s supposed to taste like sounds weird but it‘s the realest thing ever. There‘s so much info on ratios, brew time etc. that it‘s easy to forget to listen to your taste (and train it by drinking good coffee!)

SO MUCH #3. I literally discovered this by accident recently because I was tired of needing to find somewhere to brush off the top grinds into the bin. I then polish the puck with an OCD (JK, it's an imitation one that cost $80 less ) and finish with a tamp. Without the gentle bumping step, my pucks tend to do well but still end up overextracting towards the end of a pull unless I cut it short. Science is weird.

Totally agree, channelling is the number one thing to avoid when brewing coffee. My espresso game went up a level once I understood this. Yet, in a lot of videos, they obsess over temperature and pressure. Even with something like grind size, the main aim should be to get an even extraction rather than controlling the shot to the nearest second.

Great tips. Some coffees do taste like the flavour notes but you may need a certain style of grinder / burr to really bring it out otherwise it's just more blended in there or sometimes obscured by bitterness if there's too many fines or just brewed poorly. I've found you can taste more as the coffee cools so best to wait a bit if you really want to notice the flavours. Also a lot of time you don't notice some flavours until you compare and contrast with another coffee! I'd also recommend making sure your nose is cleared and you're not stuffy! Having some carbonated or even regular water to cleanse your palate between sips of espresso also helps. Oh and doing the slurpy sips to aerate over your tongue!

EB: New subscriber but truly love your content. Long-time shot puller and milk steamer. Had a failure of my beloved Elektra A3 some months ago and had to replace her. Wound up with an Elektra Verve which in some ways is more better and some not. But, I am pulling better shots and after many years of just "two fat scoops," I began weighing beans. MUCH better espresso. No channeling and perfect pucks every time (using a fifteen year old Mazzer Mini and a WDT plus scale. Milk steaming has been pretty good for a long time and I get silky, shiny every time but I guess at my sixty-plus age, my hand-eye coordination just won't let me generate more than mediocre rosettas/tulips. That said, my art has improved over the last two weeks after watching many of your clips so thanks and yes, I LIKE every one and have been subscribed since my first trip.

Well, I am an instant fan. The towel folding was super cool and the fact that you got JKim Makes WDT tool before he decided to stop selling them is awesome. I had a friend print me a bunch of them and ordered 1000 needles from AliExpress, so all my barista babies and coffee friends will be getting a nice present from me. I am still a baby at home barista who roasts his own coffee and is working on getting a real espresso machine someday, for now, my Duo Temp Pro will have to suffice. The thing I needed to know most when starting with espresso was how to control channeling. WDT, a firm TAP on the mat to settle, then TAMP. I get really good shots now even with my DTP. Thanks to the YT algorithm it placed you in my eyes. Subbed, notified and going to browse your catalog just to get to know you more. So much win going on in your delivery. I know content is hard (I have a little...lol), but I am going to be here for whatever journey you decide to take!

As an amateur at home, I struggled a lot in the beginning, and had a real hard time to get the flow correct. I then actually set a lower pressure on my machine, It were set slightly over 9 bar, and I set it to 7 bar instead. Most of my problems with channelling and / or correct shot times are gone. Ok maybe I CAN get a better cup if everything is correct set up @9 bar. But 9 cup out of 10 is better for me with 7 bar, so much easier and more reliable. In short, I'd rather have a 7 bar perfect shot, then a 9 bar with channels 😋 And yes your videos are pretty good !

YES YES YES!. Now its not universal but there is tons of research on how 6-8 bars treat the puck of coffee more gently allowing for an even flow of water and better bed saturation. Sometimes I would set my work machine to 6 bars for tricky coffees that need help extracting.
