材料:
蛋6顆
植物油75g
牛奶100g
無糖可可粉30g
低筋麵粉90g
玉米粉10g
糖100g
檸檬汁一點點
1⃣️植物油75g牛奶100g混合加熱(不沸騰)
2⃣️無糖可可粉30g過篩到鍋內1⃣️,攪拌均勻
3⃣️低筋麵粉90g加玉米粉10g,過篩
4⃣️6個蛋黃加入巧克力糊攪拌均勻,再加入3⃣️快速翻拌均勻
5⃣️秤100g糖(開始預熱烤箱)180度15分鐘
6⃣️蛋白打大氣泡,加少許檸檬汁。糖分三次加入(鍋內一定要沒有油沒有水,才能打發蛋白)打發蛋白到有堅挺的小彎勾。
7⃣️取1/3蛋白霜拌入蛋黃糊,再倒回蛋白霜輕輕的攪拌(避免過度消泡)
8⃣️ 提高15公分倒入模具,拿筷子畫Z趕走氣泡。震動兩三下,戳破氣泡,進入烤箱180度10分鐘。取出畫線。再烤170度45分鐘。
9⃣️出爐後,震兩下,蛋糕倒扣至完全冷卻,才可以脫模。
material:
6 eggs
Vegetable oil 75g
100g milk
30g unsweetened cocoa powder
Low-gluten flour 90g
10g corn flour
Sugar 100g
A little lemon juice
step:
1⃣️ Vegetable oil 75g milk 100g mixed heating (not boiling)
2⃣️ Sift 30g of unsweetened cocoa powder into the pot 1⃣️and mix well
3⃣️ 90g low-gluten flour plus 10g corn flour, sifted
4⃣️ Add 6 egg yolks to the chocolate paste and mix well. Then add 3⃣️ quickly stir evenly
5⃣️ Weigh 100g sugar (start preheating the oven) 180 degrees for 15 minutes
6⃣️ Whisk the egg whites and add a little lemon juice. Add sugar three times (there must be no oil or water in the pot to beat the egg whites) .Beat the egg whites until there are strong little hooks.
7⃣️ Take 1/3 of the meringue and mix it with the egg yolk paste, then pour it back into the meringue and stir gently (to avoid excessive defoaming)
8⃣️ Raise 15 cm and pour into the mold, take the chopsticks and draw Z to drive away the bubbles. Shake two or three times to puncture the bubbles and enter the oven at 180 degrees for 10 minutes,take out the line drawing. Bake at 170 degrees for 45 minutes.
9⃣️ After coming out of the oven, it shakes twice. The cake can be unmolded until it is completely cooled.
