Would the workflow be the same in case we want to gradient smaller objects placed on different height level in the same scene ? Thank you for the guide, its very straight-forward and helpful ! :)

Yes, I would put a slight gradient on all objects even if they are at different heights in the same scene. I would make sure its subtle though. You can go more intense on the gradient for objects that are larger or that would have more time in the sun.

How to rotate gradient?

For a position gradient you select the position drop down and can choose top to bottom or left to right. You can invert it as well. You can blend these options to do a rotation of the gradient. There are other ways for more specific area gradients as well. If this doesn’t give you what you need you can let me know and I can make a quick video on other types of gradients.
