In Germany a beer has to be served with foam on top to prove that it isn't stale. However the foam in German beers is like whipped cream and can extend above the rim of the glass without pouring down the side. In some parts of the country that's called a "Feldwebel" or "sergeant". Prost! 🍺

Different beer styles have different types of foam. German lagers are likely to have thick, creamy heads, made up of very tiny bubbles, whereas IPAs tend to have a more rocky head. And some beers don't have much foam at all, or it dissipates quickly. It's all part of whatever style they are.

Honestly this makes a lot of sense, I don’t think he explained it as well as he could. Bartenders would pour it to reduce foam so they can quickly fill the glass and give the customers their order as fast as possible. If you’re drinking beer at home, I’ll pour it heavy to get a lot of foam, wait a minute then pour at a 45 degree angle or so. Foam settles into beer and releases gasses.
@delinquense

@CrizzyEyes
@CrizzyEyes Жыл бұрын
@@him050I don't know what kind of beer you drink but no beer goes flat in a couple of minutes after being poured, regardless of the technique. The point of this is to reduce carbonation not eliminate it. In most central European cultures (Germany etc) a head of foam is preferred or even demanded for each beer.
@him050
@him050 Жыл бұрын
@@CrizzyEyes well he said broken the CO2 out of the glass. That would be imply to me that this man’s goal when pouring a beer is to remove all the CO2. If you think that people on the continent know why they like their beers with large heads, you’re deluded. They just have them that way because it’s the way it is. There’s no reason behind it to their knowledge other than it just being how it’s done.

First type of pouring is what in my area we might call "Jahrmarktsbier" (market fair beer), which you might come across at busy hours on market fairs because the number of customers makes it difficult to pour the beer properly (which takes slightly more time if you don't give out the bottles to the customer). Hence to speed up the process they might opt for pouring-version-1.

Actually it depends on the type of beer. Light beers are supposed to be drank with little to no head. Hoppy full beers are meant to have a rich large head to enrich the beer and flavors. I’m not an expert nor know which beers exactly. But my donate was a brewmaster at a brewery which won 2 world renown craft beer titles. So I believe he knew wtf he was talking about. Years ago he explained it all to me but that was years ago and I’ve been drunk many times since then.

What Americans refer to as « light beers » are beers that are around 4% alcohol generally, and have a very bland taste and almost no carbonation in them. I normally pour around half way between the two. Slow and steady, then vigorously at the end to get a bit of a collar, which gives off a nice aroma. I've been pouring beer wrong then because I deliberately always try to not have foam on. But I also get bloated if eating while drinking. I'm testing this next time. However I also love the carbonation in the beer, the fizzier it is, the better it feels while drinking. So there are pros and cons. Still, a great, informative video. 👍🏻

Actually you're getting less fizziness because its the carbonation that's released that creates the foam. If you get none, then it'll taste flat. He is overdoing the pour to make the point though.

@@dzzzzzt Just judge it as yo go along. This is what a decent bartender does when they pour. If I’m pouring a pint and it’s too flat, straighten up...too lively, angle the glass up. It’s not complicated. Different styles of beers will prefer different styles of pours. Tho only good thing about this video is demonstrated why not ‘activating’ a carbonated beer is bad, the actual pour demonstrated as an alternative is beyond embarrassing.

The problem with ordering a draught beer at most breweries or pubs, is that they serve in a standard "pint" glass. And while technically it is 16 oz., that volume is fulfilled only if the glass has liquid to the very top. Draught beer should be served with a head by having it poured into an imperial pint glass. The additional 3 oz. that the glass can hold will accommodate an ample head while assuring the customer gets an honest 16 oz. of brew.

Heavy alcohol consumption can lower your testosterone levels. This can have an impact on fertility (Healthline, 2020). Decreases in testosterone are associated with decreases in muscle mass and recovery, which can impair performance. This is a potential consequence of alcohol consumption (InsideTracker, 2022). Beer contains phytoestrogens: Studies have identified several phytoestrogens in the congeners of bourbon, beer, and wine (Gavaler et al., 1998). Estrogenic constituents in beer: Research suggests that the estrogenic constituents of beer might contribute to an enhancement of estradiol levels in the body (Catharina et al., 1988). Enhancement of estradiol: A study in 'The Journal of Biochemistry' indicates that consumption of beer can enhance estradiol (a type of estrogen) presence in the body (AdvantageJA, 2023). Hops contains estrogen-like compounds: Hops, one of the key ingredients in beer, contains an estrogen-like compound that can contribute to the estrogenic effects of beer (Business Insider, 2015). Jerry Fort the Beer Review Guy Except that it doesn't, it's a classic demonstration of a false example. Nacho in your stomach?? The act of putting the beer in your mouth releases the carbonation. This is pseudo-chemistry from someone who wants to display their apparent expertise & presentation. The head on a traditional beer comes from the initial pump out of the barrel. That head is then displaced from the glass by 'un-frothed' beer. Pouring like this is an attempt to replicate a barrel beer by appearance whereas it simply flattens the beer and ruins it's texture.

They only call beer sommeliers ‘cicerones’ in the US. Besides, ‘Master Cicerone’ does pop up for this guy’s description in the corner, at the start of the clip. Because he’s an American, likely in America. KZbin is a universal platform so the description as ‘beer sommelier’ would obviously be more widely understood, and therefore more suited to the task. This isn’t what a cicerone (tourist or museum guide) actually is. Bit like how barista (bartender in Italian) is used as an American term for a person that prepares and serves coffee. Difference being ‘barista’ is taken from Italian while cicerone appears in English before Italian, likely because of Cicero being a learned and cultured individual.
