We have in Andhra too many recipes with raw jackfruit. Panasapottu kura is one of them. Almost every home in Andhra has a jackfruit tree, including my maternal grandmother’s home. my grandfather was diabetic and he ate jackfruit fruit as it does not increase his blood sugar level. He cannot eat mango but he can eat jackfruit.

Is the jack fruit flower still available in India freely. Never seen it in store. If it doesn’t have any funky stabilizers and preservatives, it could be a great product. Wonder your process of making the flour. My brother had the same experience of better blood sugars with chakka puzhukku. So I believe in the product.
