Ingredients /साहित्य
2 bunches /10 - 12 - Colocasia leaves /अळूची पानं
Green sorrel - half the quantity of Colocasia leaves /अळूच्या अर्धा आंबट चुका
1.5 - 2 tbsp each - peanuts, gram, coconut pieces, cashews / दाणे, हरबरा डाळ, खोबऱ्याचे तुकडे, काजू

Half cup - ready dal /तयार साधं वरण
2-3 tbsp - gram flour /बेसन
1.5 - 2 tbsp - tamarind chutney /चिंचेची चटणी
1.5 - 2 tbsp - Goda masala / गोडा मसाला
2-3 tbsp - oil
Pinch of - mustard, turmeric, asafoetida, fenugreek seeds, /मोहरी, हळद, हिंग, मेथी दाणे
3-4 - red chilli /लाल मिरच्या
Coriander leaves
Recipe
Soak peanuts, gram, coconut for 2 hours
Apply oil to hands
Cut vegetables
Add vegetables and soaked nuts n gram to it
Cook in pressure cooker till 2-3 whistles
Mash the vegetables
Add dal and gram flour and mash with hand churner
Add 2-3 cups water
Keep on medium flame
Keep stirring constantly
After it boils add turmeric, tamarind chutney, goda masala, salt n sugar syrup

Let boil for 3-4 minutes
Make tempering - heat 2-3 tbsp oil.
Add mustard, fenugreek seeds, asafoetida, chilies n turmeric
Add tempering to vegetable.

Aluchi bhaji is ready to serve.. Eat it with hot aambrmohar rice or roti
Special tips
🔅 You can cook vegetables and peanuts etc in 2 different pots to bring ease in mashing cooked vegetables...though according to me it tastes best when cooked together
🔅Radish slices are added in aluchi bhaji to enhance it's taste.
