I purchased a pair of wireless earbuds that sends the audio to my iPhone via bluetooth for $20. Can someone explain why neither the GO models, or their competitors, can do this?

Most microphones do not have Bluetooth connectivity like your headphones. Instead, they usually connect using the 2.4 GHz band. An exception is DJI microphones, which can pair with a phone via Bluetooth. However, this often results in reduced audio quality, so it's a trade-off.
