Back home, waakye was my go to breakfast. The vendor in my neighborhood knew me so well all I had to do was confirm my usual order by making eye contact and nodding my head from a distance before getting to her stall. This woman truly cares about her customers! "Ekaw" (don't know the english word) has been found to be very unhealthy and the fact that she could have simply used it to cook the beans and saved herself hours of hard work says it all. Most beans/ waakye sellers and even individuals use this because it makes the beans soften quicker and you don't have to keep stirring...so to find a seller who does not use it is pleasantly surprising. I'm truly very impressed. Edit: “kanwu” not “ekaw” (forgive my initial spelling lol) is also called “saltpetre” or potassium nitrate (crystalline KNO3) in english. It is a substance used in the production of some soaps, gun power (or other explosives) and fertilisers. That is why it’s not very advisable for consumption.
