Thank you so much! I guess I can see how it translates as apologetic but I just meant it as encouragement that it doesn’t have to be all or nothing! There is so much pressure in both the Homesteading and homemaking community to do it all. I think there has to be balance. You can still make smart, informed decisions, buy cleaner options in budget and keep your family healthy. I don’t ever want to put on airs that I’ve got it all figured out or always eat a certain way. There are some things that are non negotiable of course but I do the best I can with the knowledge, time and money I have. I do sometimes over explain, I think it’s a defense mechanism 😂 I’ve had quite a few keyboard warriors attack in past videos. 🥴

My dtr. Makes the best jerky in the dehydrater. She uses skirt steak & marinates in a soy sauce type sauce. They are the best I have ever had. They are not cheap to make, but the taste is worth it.

The croissants are good … I cut them in half and freeze what’s not used within a few days ! So I can pull one out and have it when needed it and than they don’t go to waste!! The cheese your husband picked out is amazing!! Love it !!

We eat the same and make 2 trips a month to the city for a Costco shop. We love the Coastal cheese, it’s so good! We cannot get the mashed avocado here in Canada, but we buy the organic guacamole minis (all clean), and freeze them for avo toast. Try freezing the avo cups, taking them out of the freezer into the fridge overnight as you need them, works great! There are so many clean healthy options at Costco, we love it.

Make sure your grain mill will mill the oats...mine will not unless it is oat groats. You can also put them in the blender for a smaller consistency.

I hate to ask a question that isn't concerning the video, so I'm sorry about that. Do you happen to have a meat grinder? Or maybe can borrow one? The reason I ask is because while watching this video thinking about your husband and lunch for work and wondered if you had ever thought about making your own lunch meat. I watched a video about it on 2 guys and a cooler a few months back and it seems pretty easy and something I plan to try for myself someday. Also a side note that the price for beef jerky seemed like a great deal compared to the $17.99 we pay here in California for a 10oz pack, but I don't know prices in PA so it might not be as great of a deal for you guys.

all the recipes come from My Mom and our dairy farm unless stated otherwise In the summer we would have family and friends come over for a Bar-be-cue which included Barbecue meat from animals we raised and butcherer ourselves. The old fashion Ice Cream cranks (at least 2) with old towels for one of the kids to set on and several people to turn the crank. After my Mom died I took her Brown recipe box and any other special recipes and saved them to my Recipe files. I also took her favorite recipes from all her Farm Journal cookbooks and put in my file. Along with a Family Recipe book I made years ago of each of my brothers(3) and sisters (2) and mine and made it for each of my brothers & sisters and their children and my Mom for Christmas presents. I am so glad I did because both my parents are dead and my oldest sister and 2 of my brothers. Now my 3 teen grandchildren will have those recipes. Recipe for: Butter Pecan Ice Cream From the Kitchen of: Esther Alderson Ingredients: 1/2 cup sugar 1 envelope Knox gelatin 1 Tbsp. cornstarch 4 cups milk 3 beaten eggs Ingredients: 1 Tbsp. vanilla 1/3 cup butter (cut up) 2 cups whipping cream 1 cup packed brown sugar 3/4 cup chopped toasted pecans Recipe instructions: Combine sugars, gelatin and cornstarch in large pan. Stir in half of milk. Cook till mixture thickens. Stir one cup of mixture into eggs yolks. Return to pan, cook 2 minutes. Stir in butter and whipped whipping cream and pecans. Cool and freeze. Chocolate Ice Cream makes 1 gallon From the Kitchen of: Esther Alderson Ingredients: 2 cups sugar 1/4 cup flour 1/2 tsp. salt 4 squares (1 oz. each) chocolate, cut up Ingredients: 4 cups milk 4 eggs, beaten 2 cups (1 pint) heavy cream 2 cups Half & Half 2 Tbsp. Vanilla Recipe instructions: Combine sugar, flour, salt and chocolate pieces. Gradually stir in milk. Cook and stir over low heat until thickened and chocolate has melted. Add a small amount of hot mixture to eggs and mix well. Return to hot mixture. Cook and stir 1 minute. Remove form heat and chill. Add heavy cream, half & half and vanilla to custard. Turn into 1 gallon freezer can. Freeze as directed with your freezer. Four-Three Ice Cream Makes 1 gallon From the Kitchen of: Esther Alderson Ingredients: 3 cups heavy cream 3 cups milk 3 cups sugar 3 cups pureed ripe strawberries Juice of 1/2 of a lemon 1/2 tsp. salt Recipe instructions: Combine heavy cream, milk, sugar, and salt. Turn into a 1 gallon freezer can and churn-freeze 10 minutes. Mix lemon juice with pureed strawberries. Open freezer can and add pureed strawberries. close container and continue freezing as directed with your freezer. Fresh Strawberry Ice Cream Makes: 1 gallon From the Kitchen of: Esther Alderson Prepare Vanilla Ice Cream without adding vanilla. Freeze until mixture starts to thicken. Open freezer and stir in 1 1/2 cups fresh crushed lightly sweetened strawberries. Continue freezing until hard. Fresh Peach Ice Cream: Prepare Vanilla Ice Cream using 1 Tbsp. vanilla and 2 tsp. almond extract. Freeze until mixture starts to thicken. Open freezer and stir in 1 1/2 cups fresh crushed lightly sweetened peaches. Continue freezing till hard. Fresh Strawberry Ice Cream - woodland paper (1990's) From the Kitchen of: Esther Alderson Ingredients: 4 cups Half & Half 4 cups pureed fresh strawberries (or frozen strawberries, thawed) 1 cup sugar 1 tbsp. vanilla extract Ingredients: 2 eggs 1 cup sugar 1/4 tsp. salt 3 cups whipping cream Recipe instructions: Combine pureed fresh strawberries, half & half, 1 cup sugar, and vanilla; cover and refrigerate. Beat eggs 2 minutes on high speed in a mixing bowl, Add 1 cup sugar and the salt to the eggs and beat for an additional 2 minutes, Stir in whipping cream. Transfer to saucepan and cook over medium heat until mixture begins to simmer, stirring constantly. Remove from heat. Cover and refrigerate 2 hours. Thoroughly combine chilled strawberries and custard mixture using wire whisk. freeze according to manufacturers directions. Not to be negative about Costco produce, just a caution: watch for produce that uses Apeel. Bioengineered coating that is to prolong the life of organic produce. 😮

The item with the fewest, cleanest ingredients, meaning things you know what they are, can pronounce and looking for no preservatives, additives, dyes or “natural flavoring” etc.

I love Costco croissants but I don’t like that they make it with enriched flour. I still buy them but I make sure I don’t get any bread or pasta that has that enriched flour. I also used an app called yuka which goes through the ingredients and breakdown the bad ingredients.

I watch a few channels and noticed a lot of you guys having to explain why you buy stuff. It’s crazy and sad because there’s always going to be a mean person saying something. And very glad you are feeling better I’m 61 and finally figuring out what I can eat. Good for you. And I’d like to see how you got better. And your a great person and mom try not to pay attention to mean people they will always be the ones that eat terrible stuff. And not all people can afford the organic stuff that the company takes advantage of and raises the cost.
