I made a few jars of honey ginger carrots last year, I was not crazy about them, but, my granddaughter loved them and would eat a pint of them for her lunch while in college. So I would say it was a success

I go the lazy route when it comes to beets. I bake them and the beet nutrients don't go in the water. They are easy to peel. Skin slips right off.

So much hard work! Great job! Something I love to make with fresh carrots is dill pickles…you cut them into carrot sticks, they stay crisp and delicious. You can cut them up once pickled and put them in soups etc too. I also do this with green/yellow beans as well.

Remember carrots are also a thing you can ferment .. if you're still looking for something to do with them. Shredded with ginger, for example, but oogle and YT are your friend for more recipes.

When I make sauerkraut, I mix in the salt, cover the bowl with a lid or plastic wrap, and let it sit for the rest of the day. The salt draws out the moisture, so I don't have to kneed the cabbage. Then I can pack it in the jars to ferment. I have canned both the ginger carrots and the curried carrots. I still have some curried carrots from last year, which I need to use up. They aren't my daughter's favorite, so I haven't been reaching for them. All your work is amazing! My garden is much, much smaller so I haven't had as much to put up. :)

Try doing the carrots in just orange juice and brown sugar. That’s pretty good. Because I really agree with you when it comes to canned carrots.

Carrots with dill..yum!! Try a little butter, little sugar and dill. Also, fermented carrots are great.

I saur the whole head of cabbage and use those leaves to make the best saur-leaf cabbage rolls ever. Takes about 5-6 weeks to ferment them and then I freeze them (and house can get a bit stinky lol). Very delicious.

Everything looks wonderful! I just got a freeze dryer after a few years of debate. Havent used it yet, but Id love to know the ways you like to use your freeze dried foods. Some of your favorite things to freeze dry and such. I still have one meal of fresh carrots from our garden harvest last year, I put them in bags like you do but I leave them totally dirty LOL! Awesome choices for preserving. I so enjoy seeing how you preserve the harvest and what new ideas you share from books I already have. For me, just seeing a recipe on a page rarely stirs interest to try something new. However, seeing someone else do it and seeing how it looks and comes together changes my perspective and I’m more willing to try. I’m not a canned veggie person in general, I prefer frozen over canned. But what I’m seeing here makes me think it may be worth trying so like you mentioned, there will be shelf stable options available too! I hope you have a great weekend. We did a honey and orange juice carrot. I don't eat cooked carrots but my hubby loved it. I think you would just swap the broth for the oj. He didn't care for the broth one

I'm hoping to have a larger garden next year. I have a simple elevated container garden on my upper deck (where deer cannot get to it!). Focusing on just growing lettuce, spinach, tomatoes, and green beans. Things we can just go out and harvest as we need them. Not enough to preserve, but maybe someday!

I can't get my husband to eat the homemade sauerkraut. I don't have a freeze dryer, but I have taken the cabbage and cut them like "steaks" and then vacuum sealed them. I'm still able to use them in recipes. Those beets look so pretty! I just recently realized that I like them, but I have such a hard time getting them to grow and get decent size. Once they start growing, do you need to cover them up a bit?

My mom used to make extra mashed potatoes so she could freeze potato cakes. I wonder if you could try something similar with carrots. Or make carrot fritters (I make zucchini fritters and they are yummy) to freeze. You said you like to experiment. 😉

If freezing kills sauerkraut, then freeze drying which starts off with freezing it hard, obviously also goes through the same process...

Oh honey, you shredded your cabbage to fine!!! It’s supposed to be in small long strips about 3 inches long. Yours is the size for a fine Cole Slaw. The fermentation process will completely eat that small shred up.

Let me know how your freeze dried carrots taste after a while. Mine get an odd smell/taste after a bit of time. The ones in the jar may also turn white, if not used soon. Does anyone else who freeze dries have problems with a "weird" taste? It seems to be mostly orange things - carrots, pumpkin, peppers...

Interesting! This isn’t my first time freeze drying then and I can’t say I’ve had any issue with off taste or smell 🤔 I keep all the items in jars in my pantry where it’s dark and that seems to keep their color nicely!
