My husband's family grew up with turkey hash - turkey, stuffing, mashed potatoes, corn, oysters and gravy in a casserole. Delicious!

My wife Susan and I watched the video downloaded all the menu and organizational documents, recipes everything taped them to the kitchen cabinets. We wanted to do everything exactly as shown. It was great! It has given Susan and I a real respect for the mise en place . Thank You Alison! It was a great turkey day. And we made it for 16.

Your interactions with the camera crew, your walks to, and your exchanges with the butcher, your grocery store shopping , even your walk home , and your kitchen stove/refrigerator problems and maneuvering! You are like a Jazz Musician riffing on themes, in situ! In the studio, so much of what makes you so compelling to watch is missing. Alison, my dear, thank you. I was unable to return to my home (Ireland) this Christmas. I was deeply sad about this but I rallied and cooked Christmas dinner for our three children, my Syrian Partner and my Palestinian friends. Your gravy was a revelation and loved by all. It may sound silly but being able to make something so delicious that was loved by all really made this Christmas special.

Shout out to you Alison for the Grey Poupon plug. I use it as both a flavoring and emollient. It works great in salad dressings as the latter and you don't need a lot (like a teaspoon), and for the turkey I add that to the gravy I make for flavoring (as well as emollient combination). I'm getting the same turkey as you have (Bell + Evans), and it will be between 16-20 lbs. My rule is brine 1 hour per pound so if 16 lbs, I will backup my 4pm T-day to have it out after ~3.5 hrs plus .5 for a rest so 12 noon in the oven. That means out of the brine by 11:30 so - 16 hrs of that is in the brine by 7:30pm Wednesday. Brining usually reduces the cooking time so I keep a good watch on the bird, but will go with brown sugar + 1/2 cup salt (since it was brined) and healthy dose of cracked pepper. I love your attitude towards breast meat. Other cooks are killing themselves trying to produce juicy breast meat. It's okay if breast meat is kinda dry. That's why Americans invented cranberry sauce. And it's far more important that the dark meat be cooked through than that the breast be moist.

This will be the 2nd year in a row I'm making this. It's the best turkey I ever made and the gravy is magic. This year I will have a brand new convection oven. Do I need to adjust the temperature and the time? Thanks so much!

My mother and I tried your recipe and it was really good! But the turkey breast was very dry but the thigh was good! I would rate this a 7/10 cuz I the turkey breast was kinda dry and very hard so yea other than that I love this!

Hi Allison! Would this brining method work for roasting a smaller chicken? I know you said that roasting a turkey and chicken are similar, but since that's a heavy duty brine and chicken skin/meat is quite tender, I'm wondering if it will be too intense or still work? How would one modify the quantity of brine and duration? Thank you for all the videos and tips by the way! 🙌😊

Not Alison, but yes! Generally think of about 1 tsp kosher salt per pound of meat + a generous grind of pepper + generous pinch of brown sugar (optional).

She drained it after brining in frig....when she took it out she drained it and then prepped it for roasting....hope this helps

BUT: You only seasoned the outside of the SKIN - you did not season under the skin. So only the skin will taste good, not the massive amount of meat.
