So glad you liked the Cincinnati chili! It tends to be a polarizing dish (people love it or hate it). As a native Ohio resident, I grew up with this dish and love it. Robin Robertson has a version in her 'Vegan on the Cheap' book that mixes the beans into the sauce. This chili is also good served over baked potatoes. Thank you for making your videos. Cincinnati Native here. Skyline Chili was my first job. 😊 You actually don’t brown the ground beef. You cook it in water, and use an immersion blender to get the right consistency. Also, they actually use Colby Cheese, not Cheddar. 😉 We make it at home probably once a week.. and my kiddos all love it. One pound of ground beef makes enough to feed 8-10 people!

Cincinnati native here… to get the right texture for the ground beef, boil it in the water while whisking with a fork until it is fully cooked (therefore we use a lower fat variety). Also, I don’t normally care for cloves, but for an authentic tasting homemade version it adds to the dish. I have used allspice as a sub, and it is nice also; it is a bit less pungent for those who do not want to use cloves. Also cocoa powder or dark chocolate, coffee, and cinnamon are absolute musts on the ingredient list. Oyster crackers also are the only genuine accompaniment. A mound of thinly shredded mild cheddar is traditional on all the “ways”. Hot sauce is optional and Skyline (the original and the Best!!) and Gold Star have their own varieties. If you are from the area it is in your DNA. 🥰

@@ArdentMichelle Yes, the fat does stay in the water, but you can use lower fat beef or even ground turkey, or textured soy. Also, I usually make it the day before and refrigerate, then remove the solidified fat from the top. The flavor is also more developed the next day. I am eating a more plant based diet now and so I use lentils and light kidney beans for mine, and low fat turkey for the family. Skyline and Gold Star are both Cincinnati style chili. I believe Skyline was the first in the area. It is the overwhelming choice of all our family and friends there. Gold Star as I remember (it’s been a long time!) had a saltier taste, and a bit of a celery salt flavor. You can get seasoning packets online called Cincinnati Recipe. Skyline also sells frozen and canned products in limited areas. Enjoy! 🙂

I was introduced to Cincinnati chilli about 25 years ago. It was delicious. I had it several times with the whole teaspoon of cinnamon. I do love cinnamon though, so maybe that helped. I also had it in hotdogs over beef franks. It was good.

I made it as written, *Except: in place of ground beef I used 1 3/4- 2 C dried green lentils. I added 1 can of drained and rinsed light red kidney beans, and as the chili cooked I added in fat free refried beans to thicken to a desired consistency (about 2/3 can for full recipe). Seasonings were spot-on. It was really good! Took it to a family gathering and even the meat eaters loved it. Even better the next day. Extra can be frozen. Enjoy!

Easy chili is one can or bottle of pasta sauce, an equal amount of desired can beans, and chili powder to taste. Good with ground beef or substitute. We used to eat it over rice. Sometimes, with diced onions, grated cheese, and corn chips. That is a good way to dress up canned chili.

Both looked like excellent recipes and beautifully presented. I'm originally from Indiana, and I remember my Grany making a version of the Chili Spaghetti that seems similar to the Skyline. I lost her many years ago. I wish I could understand the origins of many of things she cooked. Also, the eggplant over basmati looks wonderful, great simple ingredients. Cincinnati chili is your favorite chili, whatever you like, over spaghetti. That simple. The ways allow you to make the chili suit your tastes. In Texas we don't put beans in our chili but in other areas they couldn't imagine no beans. We put it over Fritos with onions and cheese and call it a Frito Pie. But at the base it is chili.

In Trinidad we use just a tiny pinch of clove,cinnamon and all spice in our meats to cook or season, especially beef. There's also a flavouring pepper called pimentos that adds great flavour. The spices you used are not at all unusual.

About a year ago I started experimenting with adding a bit of cocoa and instant coffee to my chili. I was an instant fan because it enhanced and deepened the flavor of the chili. Lol. Have never been a fan of cloves so they're a no go in my chili. 😉

I ran out of time on this video, but yesterday I made this again and this time added some cocoa powder. I couldn't tell a difference but I'm sure it added to it. I hate the smell of ground cloves. They remind me of those clove cigarettes that people used to smoke 😂 However, I couldn't really distinguish them in this recipe. 😂

I have put cinnamon and cocoa powder in my chili recipes before, also coffee, the great thing about this kind of recipe is the differing tastes. Oooh thanks! This recipe piqued my interest. LIke pizza, chili is so wildly versatile and easy to make according to ones own taste and preferences. It can be a fancy long process or can be a matter of shaking a couple cans of something into a pan and adding spices. All good. The base recipe really allows it to be modified. I like chili but just a bowl of it is texturally boring, especially recipes that just use meat. I dont have a go-to recipe, but I usually add various beans and vegetables. I like saltine crackers crumbled on top. At some point I began making a side of pasta, rice, potato to go with it. I just always feel the need for an added layer of texture. Cornbread too. As for spices. Funny for me to see cinnamon in chili. When I was in my early 20s (I'm now late 40s), I accidentally dumped some cinnamon into my pot of chili instead of chili powder. It was a huuuuuge pot, and I wasnt about to toss it, so I worked with it. I thought it tasted pretty good, and others I shared it with wondered why it tasted extra good. I joked that cinnamon was my accidental secret ingredient. Think I will have to try this recipe just because of that. ALLSPICE. lol. Yeh, its one ingredient, and just for a second I was like.. hmm isnt it a few spices? But now I remember why I thought that. Because I never have just allspice in my spice rack. So a substitute is to use clove, cinnamon and nutmeg or something like that. Think I mandela effected myself😆.

8:49 I absolutely love skyline chili! 2 things: a meat smasher tool and a little water in the beginning of the browning process (I found a very decent one at Dollar Tree!) is my secret to that texture you referred to here. Also, this is our favorite chili for hotdogs!! I make a big batch and freeze it in 1 cup containers for just that purpose.

This reminded me of the original Manwich Sandwich that used to come in a can, really thick red source, added cooked ground beef and you put it over hamburger buns. Just looked it up and I guess it was a version of Sloppy Joes, but the sauce was a little sweet w some spices. I think I would really like this w the vegan substitute, it can be put over toast too. thank you for another set of great ideas.

Allspice is also called pimiento, it gets its name because it smells like mixed spice ( which is an actual mix of cloves, cinnamon, nutmeg, cardamon, mace etc., which might be a UK only thing, but I think your equivalent would be pumpkin spice). Try the Trader Joe’s Greek chickpeas that come in a can shaped just like the one you got the eggplant in. Whatever seasoning they use is so good, you can just heat it and serve over rice. And I know many people mix the can of chickpeas with tomatoes and cucumbers, etc. to make an instant salad with no dressing needed.

I live across Lake Erie from Cincinnati in Canada and I’ve had the dish in a restaurant when I’ve gone to Ohio to Cedar Point. I found it way too cuminy/sweet so I’m going to try your version and use the ground chicken I get because at 3.00 a roll it’s much cheaper than the 8.00 for beef. With groceries being in the 400 range a week for me and four teens … I’m always wishing I could find things cheap to make but I have a child allergic to potatoes,tomatoes ,eggplants and peppers so it’s challenging. We eat a lot of rice ,sweet potatoes and pasta😂 Hoping life calms down for you soon Michelle ❤

I grew up in Tulsa and on the very rare occasions when my family ate out, it was usually at Ike's Chili Parlor. It's the oldest restaurant in the city dating from 1908. We always got what Ike called 3-Way: Chili, pinto beans and spaghetti. When we fix it here at home we always add chopped onions and just a bit of grated cheese. I don't know what spices Ike's uses, but I won't add sweet spices like cinnamon, nutmeg, cloves or allspice to anything savory. It's very off-putting to me. One of the Tex-Mex restaurants here in the Ft. Worth area used to put cinnamon in their enchilada sauce. They didn't advertise it, but I could taste it and had the waitress ask the cook, and she confirmed it. All I ever order at a Mexican restaurant is cheese enchiladas, so we never went back. Lots of people don't mind those in savory dishes, but it's definitely not for me. That being said, the chili we make here at home is hardly traditional anything. We have a vegetarian son, so we usually make vegetarian chili, which would be fighting words to any native Texan or Oklahoman. Sometimes I eat it over angel hair pasta, and sometimes make a frito chili pie out of it, using Walmart brand fritos. I used to buy the Aldi fritos, but our son pointed out that the Walmart brand didn't get as soggy, and they're about the same price. Your eggplant/rice bowl looks delicious!

I forgot to mention that Jerk seasoning and Mexican mole dishes use these spices too. I'm with you on the enchiladas. I prefer regular cheese enchiladas to a mole sauce. Loved reading about Ikes chili parlor. 😁

I use allspice instead of cloves in all recipes. Cloves take over.

Chili is not a common food in Australia. Even though I'm long long long time vegan, I haven't noticed it anywhere except some lame version in a can for the past thirty something years. Your veg version looked a lot like how I make vegan spaghetti. But putting crackers ( crazy weird in Australia) on top is something I will try. What on earth are Oyster crackers anyway? I usually always add beans to cooking, I won't add them as fixings but I like the idea of the sweet onions. The spice combo sounds very much like Chinese five spice which adds a fantastic flavour to tofu, seitan and tvp. My family loooove it. This has certainly been an interesting video for me! And your son sounds very much like my fourteen year old son. He will purchase things for our dinner also.❤🦘🌏🌊🏖️🐨

do you have something akin to Saltines/Zesta? (very light, crispy, salty "soda cracker"). The oyster crackers are like a compact durable version. Still light and crunchy, but holds up when touching thick soups. They are small, round-ish and puffed out. Either are often offered alongside a bowl of soup or chili. No need to crumble as the size and shape are perfect for spooning. Both are neutral tasting. It is all about the salt and light crunch. Not all crackers work as they may dissolve too quickly, not salty enough, or have a buttery flavor that competes. Though, all that is up to the individual.

We have plain salty crackers but never ever seen anyone put them in soup etc. Crackers here are strictly for butter/ margarine and Vegemite. Or for accompanying cheese or dip. That's it.

Thanks for fact about Allspice ….I always thought it was a combo of strong aromatic spices. I’ve always wanted to make this but as you mentioned the recipes I read stated boiling the hamburger and that kind of turned my stomach. I will try yours. What vegetarian crumbles do you think are best? I’m really not supposed to eat a lot of meat due to hemochromatosis.

I need this chili in my life. I don’t really like thin chili, so I will not be an authentic Cincinnatian. I also want to try the instant coffee & cocoa as well. My family loves my homemade chili, so I’m pretty sure any deviation will be noticed now the question is will they like it?

Based on my quick research online, both Taco/Chili seasoning recipes will call for a certain amount of paprika (sometimes paprika is omitted). Taco seasoning mix lean more heavy on the cumin while Chili seasoning leans more toward cayenne powder.

And taco seasoning has onion powder too. It's so funny because I just googled Lawrys taco seasoning ingredients list and discovered it has cocoa powder!!! I had no idea that was in there 😂😂

@@ArdentMichelle Given the taste profile of Cocoa powder, it kinda makes sense. It's a warm bitter spice that can be slightly sweet too. It will go well with the rest of Chili's base ingredients. Garlic/Onion probably falls right below Salt as the most frequently used ingredient. I toss it in almost everything (powder or raw/cooked form).

Hi, AM! I was thrilled to see this video. I was born and raised in the greater Cincinnati area, and returned here after college. I LOVE Cincinnati chili, though I prefer Gold Star over Skyline. Another possible addition atop the chili is a dollop of sour cream, which cuts the spiciness. And another popular way to serve Cincinnati chili is via a "chili dog" or "cheese chili dog" or coney, which is a hot dog in a bun, covered with the chili and cheese. I enjoy mine with mustard and light onion. I had five daughters, and it has taken me about 30 years to learn to cook for less, now it’s just me. I made a huge pot of this, it kind of got away from me (old habits die hard ). It was too hot to put it in the fridge so I put it on the porch for the night. The raccoons dumped it over and I never did get to taste it..

I keep thinking every time I go to make my chilli that maybe I should try the Cincinnati version and keep the toppings separate. Then I make my chilli my normal way and I think next time. But after watching this? Next time is THE time. I just need to get to Bulk Barn so that I can buy a tiny amount of the spices that I won’t need for any other recipe. 🇨🇦🌶️ UPDATE - I looked at the "big online retailer" and figured out it was cheaper to order them there. I don't have a car so would need to use Instacart if I wanted Bulk Barn and adding in the delivery charges and their escalated prices I was better off. Bonus? Allspice and cloves are needed for Caribbean Jerk recipes so if I don't make CC I can make Jerk chicken legs. 😊

oh yes....now you're talking. 👍 You know exactly what to do with those spices! Maybe I should try a jerk tofu! 😂 This was the first time I've used allspice in a savory dish! I'm surprised at how much I loved it. We love the normal chili too, but this version has a space in our heart that fits in a different spot 😂 Let me know what you think after you try it.

I think your version would taste far better than what they're serving in Ohio. I tried it once and found the cinnamon and cloves and allspice to be too intense, making the chili the worst food I've ever tried. IDK why people go crazy over this chili lol! 😂

This seems oddly similar to texas hot sauce which, if you're unfamiliar, is eaten on a split and fried hot dog set in a bun with mustard and topped with diced onion. I wonder Michelle why you buy and eat the beef substites? To me they are part of the agenda to eliminate cattle. I love your content and have watched you for several years now. I know you're not a fan of ground beef and eat well, mostly vegetarian style and I adore your creativity so end up at somewhat of a loss as to you not having created your own yet. Anyway 😊, that's my challenge to you, please come up with a homemade alternative to beyond meat style products. I have every faith your brilliant food love will not disappoint.

Thanks for another meal idea with the fried hot dog. 😁 I'll be looking into that. So for me, there is no political reason for me not eating meat and sometimes using the soybean products. I've had this preference since I was a small child. I specifically wanted the vegan product in this (for my dish) due to the texture it would give the sauce. Are you opposed to tvp? Are you a meat eater? I think another option would be to use wheat berries and some brown rice in this but then it would have less protein. 🤔

Some people are suffering from a condition called Alpha Gal. That doesn't mean there hasn't been a "marketing" (putting it nicely for the thought police) push to eliminate ruminants from the diet of the general population. Because they produce compounds which most of the human population needs for health, both physical and mental.

@@ArdentMichelle I'm a bit afraid of it simply due to the agendas tied to it but definitely understand why many eat it. Openly though I believe a lot of these products are a normalization push for further things to come like lab produced/created meat. I'm not much of a fan of processed foods so that's another reason I avoid them. I love all the things you do with beans btw. Oh and I love that that you combined the caponata with rice and chick peas. I'm guilty of counting on you for a lot of food ideas lol. I like soybeans, tofu (a little) but steer clear of overdoing soy because I think I read somewhere too much wasn't really good for our hormones. I feel maybe nuts would be a great meat substitute, possibly walnuts based on the cooking time especially in something like this chili but leave it to you and your great food mind. I'll think about it too, I love to cook and experiment when my husband goes out of town which hasn't been much lately. Thanks for your content, I love your channel, your style and the way you plate your dishes as well as your cheese grater, your wooden spoons and your love of food.

I like your channel very much but the thing I don’t care for is there are beans in so many of your recipes. Beans are a source of protein but very hard on the digestive system. I like beans once in a while but only a few. I wish there were alternatives listed instead of beans.

Unfortunately there just aren't any substitutes for beans-either cost-wise or nutritionally. You can always sub for meat but then you will need to add in some kind of vegetable for the fiber and other nutrients. Because I'm a budget channel, beans are featured prominently in my cooking. I eat them twice a day and they have zero negative impact on me. It's my understanding that for people that have never eaten legumes that it can take awhile for their system to adjust to eating them and that starting with small amounts is best. I'm flattered that you would watch my channel even though I don't cook the kind of food that you like to eat. I would understand if you prefer to watch a channel that doesn't feature beans so prominently.

Please don't boil your meat in water. That's WRONG! It just seems like the meat is boiled because they are cooking so much meat at one time. So just add a little water to help the meat not burn. I live in Cincinnati, Ohio, and they are wrong. No restaurant boils their meat they just cook gallons of it at a time. Love your videos. Have a blessed day 🙏.

Lots of people are saying that you DO boil it in water and then whisk it while it's boiling in order to get those small pieces. Someone even used an immersion blender.

When my close friend who was from Cincinnati made the chili she would boil the ground beef which made tiny pieces of meat. You're right it is unusual but oh soo good. She made it with the four layers. Spaghetti. Chopped onions, red kidney beans and shredded cheddar cheese.

Better to not waste food, so go light on unusual spices that you don't know if you like. But as for skyline chili - it's a non published secret recipe, so nobody is really making an exact duplicate. There are thousands of versions of "Cincinnati" chili around with varying amounts of spices and ingredients.
