Frankie Celenza (@frankiecooks) proves that celery is anything but boring. If you've never made a celery soup before, this is your sign to try it ASAP.
ROOT-TO-STEM CELERY SOUP
Yield: 6 servings
Prep Time: 10 minutes
Cook Time: 35 minutes
Ingredients:
2 butter pats
2 TBSP olive oil
2 garlic cloves, minced
1 yellow onion, chopped
1 head of celery, chopped and reserve leaves
1 (2 pound) celery root, peeled and diced
6 cups chicken broth
4 sprigs thyme
1 cup heavy cream
Salt and pepper
Steps:
1. Heat a large saucepan over medium heat. Add the butter and oil and then the garlic, onions, celery and celery root. Season with salt and pepper and cook while stirring for 15 minutes.
2. Stir in chicken broth and thyme, bring to a boil and then turn down to simmer for 25 more minutes, until vegetables are very tender.
3. Turn off the heat and puree with an immersion blender. Put the soup back over low heat and stir in the cream. Season again with salt and pepper if needed. Serve garnished with celery leaves.

Celeriac is the name of celery root. You made Celeriac Soup. I would love to try it but they don't sell celeriac in my stores.

Celeriac is a specific cultivar of Apium graveolens; it's a completely different variety than stalk-type celery. It's also much, much easier to grow than stalk-type Celery which can be a diva in the garden. I've been growing it for years! Try it!

This soup looks delicious - however root is slang for ‘have sex’ in Australia, so as an Aussie, Cream of Root soup doesn’t sound appetising 😂😂

You can use the technical name for celery - Apium graveolens. Sounds beautiful - Bisque de Apium graveolens...

Love it! Where do we request a Root-to-Stem episode to Radishes? Or a Root-to-Stem Celery Part 2? Or ways to use Broccoli leaves? Or all the parts of the Pea plant? With radishes: besides on salad, or pickled then on salad, or sauteed in butter then served on eggs, how else can we use them? I've heard radish leaves can be turned into a pesto but haven't been able to get that to work out quite right.

Fun fact: Celery was once considered such a luxury item that wealthy families had special celery vases for serving the vegetable. Celery was difficult to grow well in the 19th century and into the early 20th century, so it wasn't available in many middle-class households. This soup would've been very decadent 100 years ago!

That’s a celeriac, not celery, we grow them in the garden, celery never grows a big round root, not even if you leave it to goto seed, but hey celeriac soup is nice

I've never see it sold with the root, not even at local farmers markets. I'd suppose, you'd have to order special or grow it yourself .

One of the cheapest and best investments I ever made was an immersion blender. They're like $30 on Amazon. Use it all the time for soups, sauces, mayo, etc. They're easy to store in a drawer and clean up in a snap. If you want to take your cooking up a notch or two, get one.

Soup is quite boring.. I grow Celery/Sellerie in my Garden. Our favorite Recipe is Sellerie 'Cordon Blue'. And the green parts are quite nice in a Salad or Slaw..

His new episodes are completely the opposite of what this show was meant to be and what made the content good and relatable. He is now in a high tech kitchen using ice cream makers that cost more than what most ppl make in a week. So disappointing
