However does the ships rudder gain authority in winds like that. It must be huge or there are 2 or 3 of them together with bow thrusters.

Bow thrusters are not used at that speed as they would be useless. The propellor pushing water past the rudder gives it steerage. Yes it becomes a skill in this weather to keep a ship with so much windage on course.
