This dish is called NIKUJAGA in Japanese and is one of the most home-cooked dishes.

~Ingredients (for 3-4 people)~
150-200g pork belly
1 onion
4 potatoes (400g)
1/2 carrot
100g thread konnyaku
200ml water
2 tabp soy sauce
2 tbp mirin
2 tbp sake
1 tsp granulated bonito stock
1 tbp honey

This recipe looks tasty, thank you for sharing. I find it interesting to learn, thats its the number one dish, that japanese men want their wife or girlfriend to cook for them. Please include more information like this in your videos. I dont recall eating dishes with potatoes in them in restaurants in Japan. Are they frequently used, and mostly in home cooking ?

Nikujaga (meat and potato stew) has long been associated with Japanese home cooking, and there is a theory that it was often made by mothers who were full-time housewives. Therefore, men may miss the taste of their mothers and want women to make it for them. There are various theories about these. It's true that you don't see many dishes using potatoes in Japanese restaurants. I think it is mainly used in home-cooked curry rice and Nikujaga (meat and potato stew).

is there a reason you use pork belly? limiting to just pork, would pork knuckle work?
