Slightly hungover following my birthday festivities (got both your cookbooks for my birthday as requested), I braved my local 'Seafood City' to buy my first whole fish to make this for dinner last night. It was just as special as you described so thanks for inspiring me and pushing me outside my cooking comfort zone. My boyfriend is a Chef and originally from NW France so he grew up eating whole fish and way more "exotic" things than I did growing up in Texas. Bonus: I feel cool & now have leftover orzo, tomatoes and cucumber salad for lunch today.

Branzino tastes beautiful oven roasted as well! A hack that I learned is that you can "stand" up the fish on its belly by balancing it with lemon wedges or cherry tomatoes so that both sides of the fish get crispy while cooking.

I love olives too, but my husband does not. I've tried forever to get him to like them, but he doesn't, so when I cook, I rarely use them. Maybe, you have to grow up eating them, not sure. I used to despise olives until my husband and I went to an Italian restaurant and they served freshly toasted crispy fluffy bread with finely chopped olives in olive oil. I thought they were mushrooms for a year! I now tolerate it on pizza. My mom also made a Middle Eastern lamb in gravy that had preserved lemons and olives, and it made the olive taste milder.

SE Asian native here - we use banana leaves to wrap the fishes and grill them, whether on the grill, on the pan or directly on the stove. It keeps the fish intact, the moist and much easier to handle, consume and clean. Which I might try the recipe because it looked very easy with very simple ingredients.
