Having worked in baguette factory ( million plus per day), there's a bit more to it than you realise. If you saw the precision measurements for the ingredients, precise temperature control of the water, the timing of the prover and temperature and humidity control, same for the oven with hot air blowing again with timing and temperature control. You would probably be better off putting the mix into several 205 litre plastic barrels so that you can let them Prove in the hot air tunnel or boiler room before then transferring to your baking tin (oil tank). Baking tin raised off the floor and perhaps use the likes of a decent space heater/ heaters blasting hot air into a hole in the shipping container low down with another vent / hole on top to act as a damper. Perhaps a layer of breeze blocks on the floor / up the sides and a pack at the back or stone to give the container some thermal mass. Seem to recall the fan hot air blown ovens used to be 175'C size of two forty foot containers on top of each other at the factory. Thermal mass used to hold the heat for hours as I've had to work inside the ovens as soon as we could bare it to change bearings rollers, etc and restart production asap. Baguettes were on teflon coated perforated trays on track system to allow continuous production.

Not sure about the shipping container oven 🔥 the floors are usually wooden lined and they are painted inside out. Also the rubber door seals. Maybe it will work just pre heat it for a day to burn all that off lol. Looking forward to seeing the quad track crush a car 😂👍

Hey Olly Have you considered baking the bread the panko way? By passing an electrical current through the dough to bake it evenly from the inside-out rather than the traditional way of baking bread from the outside-in. You just might have to combine both methods to get an even bake through out the dough..... oven baking from the outside-in and electro-resistance from the inside out. No rain here in Norwich, but over cast and gloomy all day. I am at 70%

Hope the bread making goes well I’d ask a bread maker for a few tips other wise you might end. Up with a massive piece of dough that you can’t do a lot with. We’ve had an inch & half of rain in the last 24 hrs .You could do with a pista oven I’d leave two paddles on it will work well then feeling 75% today another fantastic video Olly

I’d leave all the paddles in the mixer. Also apply oil to all the surfaces, bottom, sides of mixer and paddles. Will stop the dough from sticking

I'd leave all the paddles on the mixer, concrete mixers use a folding action to make mortar. You might need to adjust the edge scraper so flour doesn't get stuck to the edge
