So the whole blood bending removing bending is an interesting one, but from how it is presented does not really stack up against the alternative theory that blood bending just blocks the ability to bend. Most people recall how chi blocking was a skill that Amon's grunts use and were trained to use. The idea most people come to is that Amon found out about Chi Blockers or at least found out about the skill, which basically functions by disabling the body's network of flowing Chi. This of course is temporary, but will render the opponent unable to move and even disable them from using their bending for some time. Now if we recall from ATLA Aang had learned that people have pools of chakra which are pools of energy. There are 7 chakras with each one connecting to a different part of a person mental/emotional/spiritual side. Now there happens to be one chakra that is actually connected to the forehead, the sixth chakra which deals with insight but is blocked by illusion. Now the whole theoy is that Amon was obsessed with the power of the Avatar. So he took information of Chi Blockers and the way the skill works, then attempted to see if blood bending would be able to do the same thing. Eventually he stumbles upon information about Chakras probably reading about Air nomas or just Avatar Aang's journey. So he attempts to instead use blood bending to block off the pools of energy, the Chakras. Either that or he was able to use blood bending to only temporarily interfere with the Chi in a human, but the information of Chakras led him to finding out a way to completely screw with a person's ability to bend at all. Now the only issue is that as much as we know it is very little. We do not actually know too much about the overall way Chi and Chakras function when it comes together, so it could be very intertwined, somewhat intertwined, or completely disconnected from one another. I mean if Chi is the energy, Chakras are pools of energy, and there is a Chi network. Then Chakras could just be pools of Chi, this Chi flows out from the Chakra into the Chi network. So from this idea Amon really just read up on what Chakra and Chi blocking is in his pursuit of how Aang was able to remove people's bending. Since blood vessels and chi network are close, then he assumed that he could use blood bending to affect the Chi network and the Chakras themselves. Then tested his blood bending to see if he could work this way, tested it out. Then found he really only needed to block one chakra to stop bending abilities.
