There are many variants of soto. In java, the popular ones are Soto Sokaraja, Soto Betawi, Soto Kudus, Soto Madura, Soto Surabaya, and Soto Lamongan. Outside Java, there are Soto Banjar (in Borneo), Soto Padang (in West Sumatra), Soto Medan (in North Sumatra), Soto Makassar (in Sulawesi) etc. But so far I’ve only tried Soto Sokaraja (I don’t have any idea how other soto will taste like). As I remember, in Soto Sokaraja they use peanut sauce, kecap (sweet soy sauce), sambal, mie bihun, lontong, kerupuk, fried shallot, green onion, soybean sprouts, and chopped meat. After watching your video about indonesian cuisine, I could say that there are soo many indonesian dishes that I haven’t tried even tho I was born and raised in central Java for 19 years. I’ve never tried balinese dishes, sulawesi and east indonesian dishes. Sumatran dishes I only have tried nasi padang, bika ambon, and pempek palembang. Even I haven’t tried some betawi/jakartan dishes like asinan betawi😅. Now that I live abroad, I realized that Indonesian dishes are so diverse, tasty, and full of spices. It definitely will take time to explore indonesian cuisine to the core, but hopefully i’ll make it someday
