What artistic business does Steve Vai have, in writing and recording orchestral music, when he does not know Counterpoint or classical music theory? Shouldn't he try to understand the grammatical basics of music, first?

I believe you are mistaken, Vai is a full on composer and has published his own book on music theory. I'm pretty sure he knows all there is to know about that
