I always thought turtles had raisins in addition to all your other ingredients. Maybe, maybe not, but I would have thrown some golden raisins in as the carmel/pecan mixture was just beginning to boil. Just a thought! Thanks for the recipes. 🥰❤

A FRIENDLY REMINDER...When making a candy assortment to share with friends and family do not make the mistake of putting a peppermint flavor candy in with the other assorted candies because the peppermint is so strong everything with all taste like peppermint! Same thing happens with Bourbon ball cookies putting them in with other Christmas cookies. Xx

Your pretzels probably won’t come out as it didn’t seem to look quite right, if anything they will be gritty (the caramel mixture should have extremely foamed up when you added the baking soda.

I made that same Carmel crunch pretzels and didn’t care for them. They sounded so good but were disappointing in my opinion. Everything looks good, but mixing flavors all together not so good.

Most scales will have a Zero or Tare button so you can put your pot on first then zero it off, you can also zero it between ingredients.

I know that zipper bags are something that is always handy, but I highly recommend that you start using pastry bags instead. Once you master the technique, and it won't take long to do that, you will have so much more control with your chocolate. More control equals less mess, the chocolate won't "get away from you" like it did when you were filling the paper liners for your peanut butter cups. Another pro tip, start your chocolate with the turtle furthest away from you, working one by one until you are close to yourself. This will eliminate the stray strings/drips of chocolate on the turtle's backs.

I’ve been meaning to share this microwave hint with you. When melting chocolate or anything sensitive to microwave heat. Try using your defrost function and you can heat longer in between stirs. I do this for my clusters and peppermint bark. Thank you for your lessons daily

Going to put home made bread, jams, apple butter, fudge, preserved citrus, citrus candy and cookies. Much more thoughtful I think than something from the store. I think this will be a new tradition.

Another way to make popcorn balls is to mix the popcorn with the Rice Krispy Treat mix (marshmallows, butter). I made these as a Christmas treat for each student in my child’s class at school. I stuck a peppermint candy cane into the popcorn ball as the handle & tied a green or red bow on the candy cane, close to the popcorn ball. It made a very pretty & quite large treat for each child.

Becky, you are a wonder....your enthusiasm is contagious. I didn't intend to make any sweets this year but I will. I usually make a huge batch of marshmallows for my mother-in-law, she adores them. I make them rolled in toasted coconut for her (it's how she likes them). I use a recipe I was given years ago and you do not have to boil the syrup and wait for it to cool. It is handy if you want to top a slice with marshmallow. Recipe: Put 1 cup sugar with 1/2 cup water and beat for three minutes to dissolve the sugar roughly. Dissolve 1 rounded tablespoon of gelatine in 1/2 boiling water and add to sugar syrup. Flavour how you like (I use vanilla) and colour. Beat until soft peaks form, doesn't take very long. I keep the mixer slowly stirring if I am filling cones for sherbet cones. Have a wonderful Christmas.

Love your generous ❤️! We make caramelized chex mix every Christmas. The key is the consistency of the carmel needs to be like your popcorn ball one. Also we only bake it for 10 minutes mix, bake another 10 minutes stir and then pour it out onto parchment paper then work at separating the mix. Comes out great ever time!

Your video reminded me of some of what my mom and grandma would make every Christmas. I decided to do some(lots) of baking this year. I made approximately 250 mini loaves of eleven different types of breads that are sugar free and nut free for my dad's senior community, seven full size loaves of different types of breads, three Mississippi Mud Cakes and some peanut butter fudge. Just a little tip, if you put a scant smear of shortening or butter on your tray before you place your parchment paper down it will keep the parchment from sliding around. I picked that up in the last two years and I am nearly 75. It works great in any pan for parchment and wax paper. Just paying it forward.

When I make homemade Reese Cups I make a small batch of peanut brittle. After it sets up I grind it up in my food processor and add some of the peanut brittle crumbs to my peanut butter mixture. Absolutely over the top!

When I've made turtles in the past, I've found that if you put the cookie sheet in the freezer for an hour before you put the Carmel and nut mixture on it, it helps to set them up faster. Try that the next time and you'll be able to coat them with the chocolate faster than normal. Once you've finished them only keep them in an airtight container, never store them in the freezer or you'll break a tooth trying to eat them.

Hi Becky, these treats look so great. A little tip I learned from a baker friend about "tempering" chocolate is that you only melt 2/3 of the chocolate completely and then melt the remaining 1/3 in the warm chocolate. This way, the chocolate is almost always at the right temperature and shines beautifully without much effort.

Years ago I made a bunch of homemade candy. Chocolate Covered Cherries, Bourbon Balls, Peanut Cups, Christmas Bark, Pralines, Divinity and Chocolate Mint Patties. I took a huge platter of them to work. It was like the locusts going through. The next year the guys in the parts department and the mechanics started asking me if I was going to make candy again. I did and did a few more times until life got in the way.

Tip, when putting parchment paper in a dish, use black binder clips to hold the paper up the side so it doesn't fall as you fill the dish.

The making of candy is referred to as confectionery, but really, you can just call it baking. I don't think anyone is grading you on your English! We're all just enjoying you sharing these videos with us. I don't believe I've ever had popcorn balls at Christmas but I certainly wouldn't have turned them down. I do know we sometimes got them on Halloween and it's one of the few things we were allowed to have that night. Everything else had to wait until daytime. We weren't really accustomed to much sugar and with five kids, my mom didn't want to deal with all of us hopped up on sugar on a night where we were already excited.

Back in the 1960s, when neighbors gave out home made goodies at Halloween, Susie’s mom always made popcorn balls. That was one of the houses we couldn’t skip! My mom made decorated sugar cookies, others made fudge and other goodies. The popcorn balls were always the best thing of the night!

From someone living in the uk who's always used scales and metric (80's baby so grew up learning metric) i sometimes use American recipes and own a set of America measuring cups but the recipes don't always turn out right, which i put down to the potential inaccuracies. Hey Becky! I'm 65 so this was years ago... My mom would always pop some popcorn and make popcorn balls for halloween. She would wrap them each in saran wrap and hand them out to the kids. That is when it was safe to make cookies and candies to hand out, before all the store bought candy became so popular. All the kids in the neighborhood loved them, me included!

This is the first time viewing your channel, and I really like it. One thing to make your holiday easier for you, though, is your caramel corn: 10-12 cups of popcorn. Take 1 cup light brown sugar firmly packed 1 stick of butter unsalted 1/4 cup of light Karo syrup or 1/3 cup if you want it more chewy. 1tsp of baking powder Put sugar, butter, and syrup in a 2qt dish into microwave for 2 minutes. Take out of oven and mix until smooth. Add baking powder. Microwave for 2 more minutes. Take out of oven. Mix well. Pour over popcorn and mix very well and quickly. The mixture hardens fast. If you used the larger volume of popcorn, you can make good popcorn balls with it.

I found an amazing tip for frosting anything. You plop the frosting on cellophane, shape and wrap it into a roll, cut off the end of the cellophane and put the roll in the pastry bag cut end down. Then close up your pastry bag and waalaa! NO MESS! Best hack ever!

I am the same way with using a scale. I used to think it was to hard. Now I love it. Less measuring cups to clean. Tip.. sometimes its useful to measure ingredients by making the scale go negative. For example, if I need 20g sugar, I will place my sugar container on the scale then tare the scale. I then meause out sugar toll the scale reads negative 20g. Helps so you don't have to pull back out of the bowl if you over measure.

Have you tried Rolo Turtles? They are so easy! Its just mini pretzel with a rolo on top heated 3 minutes in the oven and topped with a pecan. Always a hit.

If you want to temper the chocolate, just melt about 3 quarters of the chocolate and stir in the rest until melted. Remember that not all microwaves have the same wattage. Mine f.e. is 1000 watt, a lot are only 800 or 900 watt. I have a setting on mine for melting chocolate, which just means it's using a lower wattage.

Candy isn't hard if you watch your temperature. It's my favorite thing to make. My mom was so good she could've started a candy business.

I moved to the uk 7 years ago, when I was 24 from NY state and I agree with your comment about weighing things out. It was intimidating, but now I look for the metric weights of everything because it is incredibly accurate (don’t tell my husband I said that 😂). 1 cup of flour can be off by 60 or more grams every time depending on how it’s scooped. Please do continue sharing recipes in metric.

Popcorn balls will always be associated with Halloween for me. My family makes them every year to give out during trick or treating.

I remember when I was little we would get the popcorn balls trick or treating. Sadly, my mom always made us throw them away because of being homemade. She said you never knew what you were actually getting.

I love using my scale to measure. I’ve converted most of my “cup measure” recipes to grams with great success😊 For your pretzels, mix them right in the pan in which you’ve made the caramel, then put on the baking sheet😊 For melting chocolate, I bought an electric fondue/candy melting pot. I like to make the Ritz crackers covered with melted Andes mints, and it keeps the chocolate perfectly melted! I do put foil in the pan so I don’t have to clean the chocolate out at the end. I just keep adding chocolate bits as needed, and they melt almost instantly 😊

We have chocolate crackles here in Australia.... here's the recipe Choc crackles Ingredients • 4 cups Rice Bubbles ( same as rice crispies) • 1 cup icing sugar • 1 cup desiccated coconut • 5 tbs cocoa powder • 250 g copha melted ( copha is coconut oil or Sisco) Method Melt coconut oil or Sisco mix all dry ingr pour over the oil and mix well place them in paper cupcake cups( that’s a must)

Yay!! I love that you make your own brown sugar! When I tell people I make my own brown sugar from my stored sugar and molasses, it usually blows their mind! Great recipes; I will be making the cookie butter truffle for my daughter, she loves it!

They all look so good!!! Another easy cookie that is almost a chocolate is the nilla wafer rum balls they are so good you add the rum to them and especially if you let them sit a couple of days non alcoholic you can use orange juice.

**dont let the measuring every single item discourage you from making these turtles, the recipe linked gives exact measurements (not weights), so just measure carefully! ;) They're delicous!!! ALSO, cover the entire turtle in chocolate so they will NOT stick together or to tissue. Dunk into chocolate, allow to dry on cookie cooling rack to drip down and cool but this is what the recipe calls for, and turtles are supposed to be fully enveloped in chocolate.

I am watching this today. I am picky about the KZbin that i follow for baking etc. I always use a scale and happy to have come across these candy making recipes. You are thorough and easy to listen to. You make it easy for anyone to follow the instructions. I am older and have been baking for many years but i dont do alot of candy recipes. I do coconut marshmallows and help my husband with a peanut brittle at xmas time. I will be trying your wonderful recipes this year. Thank you

When my sisters and I were teens my mom decorated our tree with popcorn balls and gingerbread people. Our house was the most popular house in town. She had to make batches of "decorations" 3 times that year...lol

My grandparents made popcorn balls on Halloween to give for treats. Not caramel, but simple vanilla syrup. They were heavenly.

So many yummy recipes. I definitely want to give home made reeces peanut butter cups a go. All the recipes looked so good. I just can’t do corn syrup! I need to figure out an alternative for that in some of the recipes. I agree with you on the scales. I’ve been using scales for so long now and love them. Merry Christmas to you and your family. ❤
