Hey Becky. Quick pro tip for spoons and tasting... You only need two. Dip one into the product and drizzle/drop the food into the spoon that will go into your mouth. Learned that working in a professional kitchen and it beats using all the spoons in your drawer every time you cook! Love your channel. Keep on growing and cooking and sharing in your effervescent, authentic way!

I just have a word of caution about feeding large numbers of apples to your chickens. About five years ago, I fed all my bright red crabapples to my flock, thinking I was doing them such a favour with all the vitamins. After chicken number five died, I started getting worried and sent dead chicken #6 to the provincial lab for testing. The test results came back - cyanide crystals in the kidneys, caused by the apple seeds turning to cyanide in the digestive system. Symptoms were lethargic chickens, decreased appetite and activity and then death. I still give my chickens apples, but I cut the core out to avoid the seeds. FYI

When my mom is steaming tamales, she puts a couple of coins on the bottom of the pan. This is in case she accidentally allows all the water to evaporate, you’ll hear the coins start hopping around the bottom of the pot!

The outer shell of the nutmeg is called mace, and is also used as a spice

I saw you use that juicer a few videos ago and told my husband about it. Well he surprised me with it and I ended up throwing a bunch of Concord grapes in and made my own juice. Oh my gosh is it good!

So many people have already said it, but your channel and this community is so positive and encouraging. This is my favorite channel right now. Becky, you’ve motivated me to be more creative and to be a doer, especially in the kitchen! My family deserves the best side of me, and you’ve inspired me to deliver my best at home. I’ve never been a baker, but I went on a bender and in the the span of two weeks, I made two loaves of homemade bread, mini pumpkin pie, apple pie, chicken pot pie, banana bread, preserved some onions, peppers and kale, and more. Your energy and attitude are contagious!

The shell of the nutmeg is called Mace and it's also a spice 😍 can be used for all kinds of baking and cooking. It has an almost sweeter smell to it.

🇯🇲 here, that travels offer. FYI: you are allowed to carry dried nutmeg because there are no longer an agricultural risk- so custom allows it.

Totally fine to bring back spices. It's live plants / cut flowers they question to prevent invasive species and bugs. I have family in the Caribbean and we have nutmeg trees. Fun fact. The red webbing on the outside of the nutmeg is dried and is known as mace.

I used to smash my garlic to peel it as well, but a trick that I learned for peeling mass quantities of garlic is to put the cloves into a stainless steel bowl, use another stainless steel bowl flipped upside down (lip edge to lip edge) and shake like crazy. The peel comes off the garlic. I just pick out the cloves, toss the garlic shells left behind and do the next batch. I tried it with 2 pots and it works just as well. A pot with the lid did not work for some reason... so stainless steel to stainless steel is the key!

We used to make apple sauce with skins on and often with cores in but seeds removed - in the big turkey roaster using the oven and a Foley food mill.. When apples ripened, we would quarter or 1/6th them, remove the seeds, cut off any bruised or bad spots, decide about the cores, indiscriminately toss them in a plastic bag (usually a department store sized), then toss in the freezer for "later". Depending upon what else was going on, some would be sliced, have the lemon juice and seasoning added as called for in a pie recipie, then placed in a labeled bag for use in a pie or other dish during the winter. In terms of actually making apple sauce, most often later occurred when the freezer space was needed amd we typically cooked down two turkey roasters full over the course of one or two days before canning or freezing. If canning, as soon as the hot batch 2as milled, the previous roasters worth was added, mixed, moderate,y spiced, and the pot was brought back up to plopping hot. Final,space, sugsr added depending upon who was taste testing (less when freezing than canning), and all was added to hot jars with hot lids. If making apple butter, the cores were left in, more spices were added, more sugar was added, some lemon juice was added, amd the mixture was reduced with stirring in the stove before being jarred up. We generally had an old school lower sugar looser butter than some began to have; especially looser than those who used pectin.

You can use the tomatillo skins as a tea! Just rinse them and steep them for a few minutes. Great if you have a cold or cough.
