When I ran a full sized freezer, used spare freezer space at my parents, utilized my refrigerator freezer, and had a lot of freezer "stuff" - I generated a form using spread sheet software then printed it with the grids on feature to create a blank freezer chart. I tucked several copies on a clip board hung beside my full sized freezer with a mechanical pencil attached by a string; ultimately I ended up with 3 colors, one per freezer. When I began my inventory,I was religious when I added items and when removing listed items. I then worked on the least full freezer space which was at my parents. Then shelf by shelf in my full freezer. We ate through the 7nlisted stuff in the refrigerator freezer before it was fully inventoried.

Portable generators are fine if the power goes out for a short period of time. I live on the east coast and when super storm Sandy hit and we were without power for a week those portables were a hassle. You constantly had to fill it with fuel and run extension cords to the ‘essential’ appliances. Well with all your freezers and refrigerators I suggest a whole house generator. We installed a generac whole house natural gas generator a few years ago and it’s a blessing. No hassles, basic maintenance and less worry. I don’t know what type of utilities you have but a whole house generator is a great investment for your home and piece of mind.

I can't lift either because of myelomylacia. But I put my water bath canner on burner and fill and use it for high acid foods. I just dip out water when finished. Same process with pressure canner. What I do to make my freezers more organized is I write on the freezer what's in there and where. You can 100% write on your appliances with dry erase markers! If I have 6 bags of frozen red peppers in the lower right hand corner of the freezer, I write "Red Peppers" on the door where the peppers are stored and make 6 tally marks. When I pull out a bag, I erase a tally mark. If I have 4 bags of frozen corn on top of the red peppers, I write "Corn" with 4 tally marks over Red Peppers with 6 tally marks so I know when I hit corn, red peppers will be one more layer down. This is also helpful if, say, my onions didn't do as well in the garden this year. I know exactly when I need to buy onions because I'm erasing the tally marks and can see how many bags I have left instead of digging around and trying to count. Sometimes frozen veggies are hard to discern what they are when they've been in the freezer for a while, so its great to have exactly what they are written on the door of the chest freezer!

One very important thing to remember is that you HAVE to have a switch installed at your fuse panel that turns the power off to the power lines. Linemen working to restore power have been electrocuted from generators feeding power back into the system. We bought an electric start Predator generator that powers our whole house from Harbor Freight for about $700 on sale. My husband installed a tri-fuel kit for about $200. It can run on gasoline, natural gas, or propane. We have to switch power over and turn the generator on (push button) but for us, it sure beats paying several thousand for one that starts automatically. It works great!

Becky, my mother-in-law and I canned beef for years, it tasted great and was so easy to warm up with some green beans and mashed potatoes when she was cooking for a big group of hunger farmers. His family homesteaded a 40 acre farm in 1856. It has grown to 400 acres over the years and are on our 7th generations. We don’t can much anymore, but watching you work your garden sure brings back many fond memories.💕💕

Canned beef? ....no.....just no. Stop it.
@debbiedoor269311 ай бұрын
Your story sounds exactly like our farm. It was homesteaded in 1856 with 40 acres. We are now a 7 th generation farm family, although, now we rent some of our land and bale about 5,000 small hay bales for horse farmers . We now have 400 acres or thought we did for many, many years. We had a survey done and discovered there was 14 acres across the river that we thought we sold some 60 years ago and another 7 acres in another land sale with another neighbor. Thankfully, the 7 acres was conveyed back to us and the other 14 acres, well it’s just there. I still can beef. I learned it from my mother in law. And you are right, there was nothing better than mom opening 2-3 quarts of beef with all of the yummy juices that she made a gravy with, peel up some home grown potatoes and fresh green beans and wilted lettuce. Then she would whip up a couple of pies faster than you could blink. Oh what fond memories. People that have never tasted canned beef have no idea how flavorful it is. We still buy a beef every year and split it with our daughter and you can bet your bottom dollar that we can some of that beef. When we ordered our last one, I told the butcher I didn’t want a lot of steaks, just cube it for canned beef. The butcher asked me twice if I was sure and I said “yes I was sure”. He said ok, but my meat cutters are going to have a fit when they cut those beautiful porterhouse steaks into cubes. Of course, we saved the t-bones and rib eyes. I’m so glad they did. Merry Christmas.🎄🤶🧑🎄

My husband loves the chest freezer over the upright, but it's a nightmare to keep organized. I have bins, but they get frosted in and are hard to move. We live in the south and have hurricanes, he stayed for Hurricane Ida and manned the generator to keep the 2 fridges and 2 freezers running while power was out (5 days before it came back on). I keep the bottom of the chest freezer loaded with frozen milk jugs (rinsed and filled with water). It will keep the food frozen longer if the power is out and a fully loaded freezer stays frozen longer than a half filled one. Becky, I can all kinds of meat , veggies, soups and stews. It gives me more space in the freezers for casseroles, marinated meats and things that I don't feel safe canning. For years we grew it or raised it if we ate it. I enjoy seeing you work so hard keeping food security of healthy nutrient dense food. Once you start canning your meats youll love that convience too I believe. I use an All American on my glass top stove. Just remember to lift and never drag it on your glass stove top. My canner is 50 years old. Every year I inspect all the parts and replace anything that needs it. In 54 years I've lost very few jars. Keep keeping on. Love to you and your hubby. From another Washingtonian.

Becky, you are such an inspiration! I have a small suggestion for an app that this lazy old lady (I'm 75) has found really useful! I have 3 freezers for 2 people! One chest freezer, one upright, and a cross bottom on my French door refrigerator. I like to meal plan a week to a month ahead, but I am not inclined to "read" inventories written on my appliances. I use an app called No Waste to keep track of my inventories, both frozen and in my pantries. So I can sit at a table or in my comfy recliner and plan to my heart's content!

Hi! All you need to rely on an upright freezer is a lock, and an alarm. Part of the alarm goes in your house and the other part goes inside the freezer, just like what you have in your chest freezer.

I always check the dates on my freezer meats and when packages are six months old, I bring them into my kitchen and thaw them. Then, I can the meats: beef, pork (including bacon), chicken, fish. These then go onto my canning shelves and are a ready meat product for a quick meal. The results are wonderfully tasty and the meat is very tender. In addition, I also can cheese, veggies, fruits, fruit pie filling, spuds, pumpkin, etc. Whatever I am able to get my hands on that we like....yep, it gets canned. Since there are only two of us now after having a family of six at home, whenever I make a casserole for us or turkey dressing, I always make tins of it for the freezer to have and enjoy later. You are doing an excellent job of being a great example of a woman who is diligent with finances and the foods that you produce. Appreciate your honesty and just being 'real'.

We purchased a Generac whole house generator in the spring. Our electrician was helpful in ordering the right size generator so we could use everything in our home in case of a power failure. If you do plan on purchasing best to put an order in as soon as you’re able to. It took months for our generator to be delivered and a couple more months for installation due to shipping delays and contractors being booked solid.

We live in Florida and after Hurricane Irma, we lost power and water for four days ( I had filled ever available container/jar in the house prior to the storm). But we purchased a Generac stand by generator. It's definitely an investment, but the peace of mind it gives is awesome. They have natural gas and propane run ones. I have two freezers and a fridge/freezer full of food and knowing if our power goes out that our food will be ok and we'll have water...so nice.

I’m a visual person so hanging a dry erase board above the freezers with what’s in each one would really help me. We have a portable Honda generator. In a power outage, we generally run our fridge and freezer all night while we sleep , then change over to the air conditioner and tv during the day. Alabama Power is great in our area and our power is generally restored quickly.

I agree, deep freezers are hard to keep organized. I use the re-useable bags too and store like items together, I do an addition step and color coordinate where I can, like dairy in yellow bags, veggies in green, meats in red bags and when I go through it I put all the oldest on top in each bag. I like to keep a list near the freezer of everything that's inside and mark it off when I take something out and write in down when I add items, with a pen handy for others to do the same. BTW our deep freeze is 20+ years old and still running good. One tip; always keep space around the unit for good air flow.

I can meats. My favorite is chicken. You can raw pack and that is the easiest, but I like to either par cook chicken pieces and can in broth or a spicy broth. It is so convient to use. I use the broth for soups, or just to warm the meat in the broth, or use the broth to cook rice or noodles in. The texture is great. Our venison I can in a broth also and it helps with any gamey taste. I cut them in chunks and put them in broth raw or par cook. My husband likes to eat it right from the jar or make a sandwich. It is so tender. I have done this with beef roasts or extra steaks. Ground beef I do can for chili, rolled tacos, soups and am very happy to have on the shelf. I must say that it looks like it wont be good, but we like it. Try in small portions and see what you like and then can it that way. You did great on your freezers. I found some totes on amazon just a bit smaller than the ones you had linked because they were a bit big for my small freezers. There are many choices. Thank you so much for all your help. Love it.

As far as a generator goes, if you can afford one that is hard wired (I think that's what it is called) into your electric system, I think that is a great way to go, especially if your area loses power often, or for long periods of time. We didn't go that route, instead opting for a gas powered one just to plug in a few things. Our city has it's own municipal lighting plant that covers our city and a few neighboring towns. Because of this, preventative maintenance is better than the bigger companies, as well as having "on site" equipment and supplies (cable, poles, etc). Repairs are relatively quick, so we aren't without power for too long.
@kimcritchfield57962 жыл бұрын
Gas doesn’t store long. A propane tank does. I recommend a propane or dual fuel generator for that reason. Otherwise you have to keep swapping out the gas cans. Yuck.

It is best to pressure can your meats so that in the event of a power outage, you don't have to worry and you maintain your investment. Check out Granny Karma's video on her KZbin channel about how she lost thousands of dollars in meat due to a deep freezer issue. It is an eye opener!
@debbiebenge93982 жыл бұрын
Great to have an alarm freezer, but I learned a neat trick to know if you lost power while gone for an extended time, like vacation. If your power goes out and comes back on in time for things to refreeze, you'll never know it. So put an ice cube on top of your goodies before you leave. If you come back and the cube is still intact, you'll know you didn't lose power for an extended time. If it's gone, it's time to look more closely at your frozen goods for signs of damage from a thaw & refreeze.

A tip for keeping track of your inventory! Place a small whiteboard on top of each freezer. They are magnetic so will stick to the lid. Mark down things as you put them in, cross them off or erase them as you use them. That way you can know exactly what you have without opening the freezer and raising the temps.
@kimberlybeckham24122 жыл бұрын
I actually go even simpler than that and write with wet erase marker directly on top of my deep freezer (it has a smooth surface just like a white board). I cross things out as I go and once a month I take a picture, erase it all and refresh my list with stuff not crossed off. Everything comes right off with water and there is no staining left behind. I use wet erase so nothing accidentally gets wiped off (learned that one early) Also, instead of stacking my freezer meals, I label the side and stand them on their sides after they are frozen solid. That way I can see all of them at once and not have to lift them up to get ones down below.

I always froze my grains and flours for 6 to 8 weeks. Then you can save freezer space by removing and placing in very large food grade plastic buckets with special screw on lids and keeping buckets elsewhere. The initial freezing kills any insect infestation. Although I've read you can skip the freezing step if enough O2 absorbers are added to an airtight container as the insect eggs, etc. cannot survive with no oxygen.
