Having no family left. I buy a turkey breast, boxed stuffing , make green beans casserole, I buy a pumpkin pie. I remember when I had gotten married 43 years ago I would follow my mom’s recipes for the holidays. I remember getting up early to chop onions and celery and cut up the old bread. Thank you Becky for showing me things I used to do when I was young.

Hubby and I are 65 and live in England (his country) but I am American (Texas). They do not celebrate Thanksgiving here, of course and we have no family in England anymore. My Mother passed away earlier this year and I am really missing her. Thanksgiving is such a family holiday that this is the only time of year I REALLY miss my family. I will still cook a feast for the 2 of us but I so miss cooking with my Mom, even when she was too frail to stand long enough to cook. She would sit and chat while I cooked and we talked over all the Thanksgivings we spent around the world in our military travels. I hope you enjoy your turkey and stuffing, just as I will, despite of the lack of family. Sending you virtual hugs! Happy Thanksgiving!

My Gramma died on Thanksgiving in '09. Its still a bit sad for us. But I swear she did it on purpose! Think about it. Everyone has off from work for the long weekend and is in town. You have masses of food in the house and cooking it gives you something to do. And it's a holiday to be thankful for your loved ones.

Hi Becky, I wanted let you know that you can save your cheese rinds off your Gruyère cheese or Parmesan cheese and pop them in the freezer. Add them to your soups to add flavor while cooking. Remember to fish them out before serving but it is an amazing way to add some addition flavor! Also, I made your Grandma’s stuffing last thanksgiving and it was a huge hit! It is on our menu again these year by a unanimous vote. Thank you for bringing joy to our home and I am so grateful for all of your wonderful inspiration and recipes. 🧡

Here's a great leftover stuffing idea. you'll need a waffle iron. 3-4 cups stuff, 1 egg -beaten, 2 Tbls. Melted butter. Combine. Put 1/2 cup stuffing on a hot waffle iron, sprayed. Waffle will brown. Serve with eggs & sausage for breakfast, or turkey & cranberry sandwich for lunch.

The other day I went to the store to buy naan to go with the coconut curry I made and the didn’t have any and I called around to other stores and nobody had any, I was in the parking lot of the store trying to figure out what to do and I said I’m going to make my own, I went I. The store again and grabbed the 2 ingredients I didn’t have on hand and I made my own naan! I have never made any bread of my own or even used flour outside of regular cooking! You have given me the confidence to do something like that and it turned out great! Thank you!! Also it came out way cheaper than buying naan bread

The pitato dish is pronounced I believe as follows: aww gra tin. The recipes look yummy. I cook all the Turkey "extras" inside the turkey on the stove with butter and broth and use the liquid for my stuffing. I only finely chop the liver to add in. No one can tell it's in there. Also add sauted finely chopped fresh mushrooms and tiny slivers of chopped carrot. Have a wonderful Thanksgiving!

Hey becky, the digestive "cookies" (biscuits!) The brand name is McVities. They come plain like you bought, but more popular are chocolate digestives, one side of the plain digestive has a thin layer of chocolate - they are available in both milk chocolate and dark chocolate. Another British biscuit you might like and the plain version would also be good for a cheesecake base are hobnobs, they are an oat based biscuit, not like an oatmeal cookie your familiar with but rather like the digestive. its half digestive, half oatmeal cookie but has the density and snap of the digestive/Graham cracker that you get from true biscuits aka twice baked; unlike cookies which are soft (& probably part of the reason why brits will say a cookie is a biscuit but a biscuit is not a cookie).

Looks like amazing recipes! FYI~cheesecake should not be beaten in the mixer since it aerates the mixture and changes the texture making it more spongy. Very soft cream cheese and hand mixing gently with a whisk is the best way to blend for a very creamy cheesecake! 🙂

You can use a mixer but just be careful of the speed you cream the mixture with; I've done it hundreds of times. You don't "whip" it - you "cream" it. Becky did just fine obviously because hers was beautiful!

Hi Becky your potatoes au gratin, is very similar to mine, but I use layers of thinly sliced onions instead of garlic. I also have a twist, add thin layers of uncooked sausage meat. Now you have "gateaux du pauvre homme". I make this often and when my grown up children come to visit , IT'S A MUST!!!!!! All the best. Anne in France.

I envy this! I live in a really small studio and dont have space to cook or bake for a large group. My parents stopped hosting Thanksgiving due to my siblings passing away and now we barely celebrate it. Im hoping one day ill have a beautiful kitchen like this and can host thanksgiving and cook for my family and get them back to celebrating. ❤️ Also love Julia child. I still like to follow some of those old french recipes. :)

OMG Becky. I made the orange cranberry cheesecake! I’m shocked. I can’t believe I made a cheesecake. I know it doesn’t seem like a big deal but I NEVER thought I’d make a cheesecake never mind a flavored one. My family loved it at thanksgiving. I did exactly as you did regarding the sauce. No extra sugar, corn syrup or even a blender. Exactly like yours. It was phenomenal. I used the whole bag of cranberries (bc what would I ever do with random cranberry’s ?). The extra sauce I put in a jar and it was fantastic on leftover Turkey sammys! Love it! I can’t wait to make another one.

Tip on cheese rands; Great addison to put in soups/sauces. Its not a problem to let it cook along for up to an hour. I have a freezer bag in my freezer where i save all cheese rands.

For a super quick au gratin you can add your thinly sliced potatoes to a baking dish in layers - sprinkling a small amount of powdered onion soup mix and a drizzle of heavy/thickened cream between each layer. Alternatively, you can do the same layering process but add chopped green onion, crushed garlic and cooked bacon with the drizzle of heavy cream between each layer. Top with grated cheese and cracked black pepper.

When you’re caramelizing onions, add some water, salt, butter and pop a glass lid on it. The onions will cook significantly faster from the steam, and the glass lid helps you keep an eye on it. Finish with the lid off when you get to the point where you have to stir frequently. Cuts the time in half!

Becky Have I just discovered your channel and I am a local native Oregon girl myself. Your stuffing recipe with the modifications of apple and sausage sounds so much like a stuffing recipe that my mother would make. We lost our mom this May and prior to that she moved from her longtime home to Assisted Living where she had limited capability to cook. While cleaning the house before I knew what happened her recipe book got tossed by my brothers. So very glad your have your grandmothers recipes because I really wish I had my Moms collection from over the years. You are truly a blessing to watch.

For upside cakes or other sticky things that won't come out of the pan because they are too cool ... turn the pan upside down on the plate, take a warm towel and lay it on the bottom of the pan for a minute or so. The warmth of the towel will slightly melt the caramel and it will usually release pretty easily.

When you've watched enough of Becky's videos, you know when a recipe is truly a winner just by her expression while tasting it! You could tell the difference between the stuffing reaction and the gratin reaction. I've never had stuffing and weldon't celebrate Thanksgiving in my culture, so I'm not sure if I would like it. But I do love potatoes and I've had amazing potato gratins! That one looks fantastic.

I've been listening to you today while meal prepping food. Rather than all in one day I've broken it up into batches. Today was all the mince I needed to form into things like meatballs burger patties and steaks. You're so inspiring. I hate forming mince (because I don't like touching meat with my hands) but I just sat down and got it done while you were in my ears. And my husband was definitely surprised when there was only one bowl and one jug to clean afterwards because they all used similar ingredients. Thank you for always posting. My late husband took our family stuffing recipe and tweaked it. We do a pork sausage, apple, Bartlett pear, and some raisins. People who don't like stuffing really love mine. I bake mine the day before and just heat it up in the oven while the turkey finishes. We love Thanksgiving and all the fun sides. McVities Chocolate Digestive Bisquits are my mother's favorite cookies. She is from England and ate them as a child. And, yes you can make it the same way with sweet potatoes, you can add nutmeg also!

Becky you should always save the ends (rinds) of your cheese. They are great to put into soups, and stews!

Hi Becky. Two comments about the recipes. We put chicken livers in our stuffing. It adds a rich buttery taste. You would never know it comes from chicken livers. The trick is to chop them very fine. We use the food processor for that. Also, I came up with a sweet potato gratin a few years ago. We sprinkle some paprika, a bit of salt and white pepper right on the potatoes. Add a little gruyere cheese in between the layers and drizzle a small amount of cream over the top. You can make a cheese sauce, but if you do that you don't want to add the cream. It tends to break. When we make a sauce, we simply heat whole milk and reduce it then add the cheese off the heat. We don't care for the taste or texture of flour in the sauce. I hope you give it a try. The food processor works well for making tge cheesecake filling. I’ve never used my mixer for a cheesecake.

I used to make a gratin with layered potatoes and sweet potatoes. Start with carmelized onions on the bottom, layer the two types of potatoes, add sage and thyme and other seasoning, and cover in broth.

Digestives are common cookies in Canada and most of us grew up eating them, so it's quite a nostalgic thing for us. I'd never heard of using them for the crust of a cheesecake which sounds wonderful. Looking forward to seeing how it works out for you.

We don't have Graham Crackers in the UK so use Digestive biscuits most often for cheesecakes. They're also often dunked in a big mug of tea or coffee, or for me hot chocolate since I don't drink tea or coffee.

I make my upside down apple cake with a cheat caramel. Sprinkle soft brown sugar in the bottom of the cake pan and put dots of butter all over the sugar, then lay on your apple slices, and cake mixture and bake. Try flipping the cake a couple of minutes after it comes out the oven, it comes out cleaner.

I buy a lot of cranberries this time of year and dry them myself because I really don't like the pre sweetened ones. I put them in baked oatmeal with apples and they're really good in no bake cookies in the summer.

Hi Becky, Im from Melbourne Australia & I make potato bake with both Potato & sweet potato. I have made it separately & together. I make it the same way but I make alternate layers of potato then sweet potato. I also add crispy bacon & onions & more cream to make it creamy. So yummy. Always a winner in my house.

Becky, there is a difference in "stuffing and dressing". Stuffing is put in the bird, while dressing is a side dish, It's the same thing, what you do with it is the difference. A lot of people use the term interchangeably. Just so you know.

We add mostly dried corn bread to our dressing and not so much dried white bread and I personally don’t add sausage but I know my northern family does use sausage! I make a scallop sweet potato with thinly sliced sweet potato and onion add a little cooked bacon bits and I use a little sharp cheese and cook very slowly with broth and a little sage salt and pepper

One of the best side dishes I’ve ever had was years ago at Bobby Flay’s Mesa Grille in the Bahamas. It was a southwest sweet potato gratin. Not heavy on the dairy but lots of spice. So good! I’ve been looking for a recipe since.

Just a little tip about cooking in enamel pots and pans. I would use silicone utensils in your cookware, as it will keep you from accidentally scraping the enamel off your cookware over time. I am in direct sales and we have some enamel cookware and that is something we tell our customers too. !I hope this helps you in the future

My husband's brother and his wife have been making this stuffing recipe for several years now, and it's so good! When we have Thanksgiving with my family, I have to make a pan of this stuffing just for my husband because he is so disappointed by regular stuffing now.

We use Digestive biscuits in the UK because we don't have Graham Crackers. Also for an autumnal twist you can also add Ginger snaps in with the digestives. Add cinnamon and also nutmeg. I have just finished making Caramel Macchiato Cheesecakes for the weekend as all my children and grandchildren will be home. Also a lovely decadent cheesecake is Turtles Cheesecake. As you can see I love cheesecake
