So, I wanted to let you know that you have inspired me to start cooking again. I was diagnosed with stage 4 colon cancer and just stopped cooking or really doing anything. I started watching your Videos a few months ago and am ready to get back into the kitchen. My husband and I thank you.

I'm sorry to here about your cancer. I have had crohns disease since I was child and I've had all but one metre removed over the years and the issues that come with it. I was being fed through my veins but every vein clotted and I could no longer be fed that way so even though it's painful I have to force feed myself. Every time you mention using up carrots, I think of the Dutch dish Hutspot. It’s a dish of potatoes, carrots, and onions that are cooked together until tender, then mashed together with some butter, salt, and pepper. We always served it with a kielbasa type sausage. It’s delicious.

I'm from the Netherlands and carrot stampot is one of my favorit foods. We make all kinds of stampot with vegetables in the wintertijd. Always live to watch you. I love to cook too.

@@yvonnezeller6625 I’m in the US, but both my parents immigrated from Holland. We also had cabbage stampot, but my favorite was with carrots. As a kid I couldn’t pronounce it correctly in Dutch and called it “Stomp the pot”, which made since to me bc my mom mashed it with a potato masher. 😃

I totally understand what you feel. I'm terminally ill and most of my time is having to rest in bed or on the couch. I am constantly in pain but I also have some intense pain and it's been so bad recently that I've been in tears. I find that watching Becky doing all the things that I used to dream of doing distracts me from what I'm going through. There are other channels I watch but none of them are as good as Becky.

Becky 2 things…I heard you saying you wanted a pepper mill but didn’t want to crank all the time try The Peppermate. It’s the one Ina Garten and Jacques Pepin use and it’s great. I’ve had mine for years. The other thing is that I am in my sourdough era and I was really struggling with making my starter with no success until I saw a video of an old fashioned method that uses yogurt! I did it with a small container of Fage and after 8 months I was finally successful. Just add the yogurt, your fresh milled flour and filtered water until it’s a thick pancake batter consistency…leave it on the counter with a coffee liner on top and don’t do anything but stir it until it starts to grow. Trust me it will work! Love your videos ❤

Sumac is one of our traditional native foods and I have always been very fond of it. Sumac is especially good with maple sugar. We have always harvested our own sumac, but it can be difficult to get it at just the right time before the bugs invade. I have a feeling the ancestors were not so particular about keeping the bugs out of their food. I love that you can get it from some stores now.

I mill red lentils into flour and add to bread mix to make it healthier . Chick peas milled to flour adds protein too.

Sumac is the only spice that I ever use. I was watching a cooking show and they sprinkled sumac on a chicken breast and then another recipe for roasted vegetables like parsnip and cauliflower roasted with sumac on it. The focus of the episode was sumac. It took a bit of researching to find the sumac as it wasn't available in most supermarkets in my country but I found an online spice store which stocked sumac and also sweet paprika which you can't get at the supermarket either. You can now get sumac in some supermarkets. I love anything that has lemon or a lemon flavour for both sweet and savory food. In the off season months in my country lemons sell for up to $US12 a kilo which I just don't have the extra money for that. So when it's the right season lemons will come down to $US4. I buy more than I need and I take the time to use a peeler to cut off the peel. If any white pith is still on the rind I take it off with a paring knife. I then dehydrate them and then most of it I turn into powder when needed. I juice the lemon and freeze it in ice cubes. I then take the pulp and freeze that as is. Sometimes, I'll cut out each wedge to freeze in some lemon juice.

I’m 62 and I’m cooking everything from scratch…..with no help from the hubby. Been married for 30 years, but God oh mighty I’m tired! I like to plan out my meals like you do. I laid out a couple pounds of hamburger, some roast, and a couple of different canned soup I canned myself to get things ready. Tonight I made homemade sloppy joes sauce and everyone raved about it. Said it was so much better than store bought. Roasted up some potatoes, and a couple different canned fruits. Perfect for a busy day of doctor visits. Roast and carrots for tomorrow. Thank you for inspiring me.

I love roasted vegetables. today we had roast chicken and vegetables cooked in one bake dish, it turned out wonderful and we had apple pie for desert in which I made the apple pie filling and crust made with butter, so it was nice and flakey.

We do a grated carrot and pineapple salad…. Tinned pineapple in juice and add as much of the juice as you want (depends how wet you like it!) - it’s delicious 🤗

Walla Walla onions do not keep well, I learned the hard way, but I tried some onions from Gurneys seed Co. called Candy hybrid Onions, they keep beautifully and they don't cause you eyes to burn as badly as most onions do. give it a try sometime and let me know what you think!
