Bread used to be scored because all the families cooked their bread in the large community oven, each family had their own pattern so they knew which loaf was theirs.,🥰🍞 I love that your family pattern is now and forever more a 🍃leaf.

My non profit, used pumpkin rolls to raise funds for several years. We had community volunteers bake a recipe we gave them and we sold them at Thanksgiving. We made several thousand dollars for our children’s grief center each year. It grew so large and had such a reputation that we finally had to call it quits! I loved watching you bake yours, it brought back wonderful memories to me, the founder of Olivia’s House, a grief and loss center for children in York, Pa. Thanks for that! ❤

Hi Sharon! Sweden here! I have been growing veggies a long time but in these times with inflation and war threats I find it even more necessary than ever. My biggest issue is to find a pressure canner, don´t like to order from e-bay, I prefer to buy in store if something fails. It´s also sooooo expensive to get proper canning jars here due to my extremely tight budget. Do you have these things in UK? As for now I dehydrate or freezes everything and it would be a blast being able to can. Live in the countryside and we do pick a lot of berries and mushrooms, do some fishing and my husband are hunting, mostly moose and that fills our 3 freezers, really need one more. I would love to can so I don´t have to worry going out of electricity in winter storms and also save electricity and our money.

I’m in Australia and I can’t seem to find many homesteaders here either. And jars, pressure canners etc are so very expensive here. Im learning from Becky and trying to adopt some of her techniques. I have to figure out how to store preserved goods because the climate her is so hot, especially where I live.

I LOVE your family get-togethers to make the homesteading tasks easier! At our place tomorrow we are doing the same thing, only with turkeys, lol! We're having chili, sweet cornbread, chocolate wacky cake - the guys are butchering the Thanksgiving (and spare) turkeys and doing the main plucking and we ladies will finish up the plucking/pin feathers in the house and package them. Many hands make the work light!

Lovin your videos, Becky. I’m from South Mississippi where biscuits are a staple. I have a tip that you may want to try. I wish I could remember who I got this idea from so I could give them credit, but it’s been a couple of yrs and I honestly don’t remember. Anyways, instead of cutting my butter into my flour, I grate my very cold butter into the flour with a cheese grater mixing it in gradually as I go so it doesn’t form one big clump. I use a flat cheese grater, not my box grater…but you probably could use a box if that is all you have. I have also used my micro plain (large grate side). Give it a try and see what you think.

My foster mum was an awesome baker and used this trick to make scones (we are Australian). I think your (American) biscuits are almost the same recipe as Scones and they seem to be used the same as either sweet or savoury. Blessings, Dot

Becky, you can actually cook the biscuits and freeze them in individual foil then when ready to eat, preheat them at 350. Works like a charm

I used to make a similar no knead bread recipe without a Dutch oven. Instead you cook it in the oven on a preheated pizza stone and pour about a cup of water in a separate dish at the bottom of your oven just before baking which adds a steam effect similar to Dutch oven. Might be worth trying with Becky’s recipe if you don’t have a Dutch oven. Hope that helps (or intrigues) someone ☺️

You can also make a "poor man's dutch oven" by taking two matching bread pans and putting one over top of the other (like a clamshell) and clipping them together with binder clips.

Hello Becky! So excited to see you experimenting with flours. One tip: you can mix different kinds together if you like a particular flavor (nuttiness of the darker flour) but prefer a less dense structure (mix with a lighter and starchier flour vs a whole grain flour). There are a number of ratio guidelines out there about this, but generally 60% or less of whole grain flours in a mix will give you a nice taste/ structure balance :) Hope this helps!

Oh, I love your channel. This garlic episode was so interesting. I'm from Florida and during the Hurricane, I was so scared. I'm senior living alone with 4 Chihuahuas. I started watching a series of episodes and before I knew it, several hours has pasted.The whole time I was so relaxed and I felt like you were a neighbor talking to me. I hope you enjoy the frozen biscuits as much as we do. It's just the two of us and it is so nice to pop out just a couple of them, bake up in the air fryer and still have plenty in the freezer for the future. I peel garlic for processing all wrong...in warm/hot water. It helps the paper rehydrate enough that it is easier to slip off and control the stickiness on hands. For garlic I want to chop and freeze I do batches in my Vitamix with enough water to cover, chop/mince then freeze in ice cube trays along with that highly flavored water. Pop out into a zip top baggie later. So easy to use in future recipes. Your garlic peeling gathering looked like a fun time with a delicious meal. I hope you were able to put your feet up and rest the following day.

I was thinking the same thing with the biscuits, as here, too, it's just the two of us, and if I made all the biscuits, they'd be gone within 24 hours by hubby sneaking them, and he doesn't need all those carbs! If they're not baked already, then I can limit them (he's a diabetic with absolutely NO willpower to control his diet, so I have to do it for him... yea, I'm being 'Mom' over this, but I want to keep him around for a long time, since it took me 50 years to find him!) in his diet. I buy large jars of chopped and minced garlic, and I'm not sure what liquid is in the jars with the garlic. I think I'm going to try to see if I can grow garlic here in zone 4 next spring, and follow your tip. I have never grown garlic before, because I thought it wasn't a long enough season to grow it. I'm not sure Becky knows that too cold a temperature will kill the garlic, and where I'm at, we can get down to -40 Fahrenheit during our winters. She's a little more temperate where's she's at than I am.

@@rhondaalbrecht Try planting a little garlic right now in as protected a spot as you can. Mulch it heavily then in the spring pull the mulch back as the soil warms. Crossing fingers you can make it work. I'm in zone 5b and we can get down to -15 and I've never lost garlic that way (knock wood!).

@@mollysmith6055 That's what I'm thinking of doing... a patch on the south side of the house which would be protected from the northern winds and snow that blows in from that direction, and mulching it, as well as covering it with burlap as someone else suggested on a YT video. Seems that yes, it needs the cold to develop heads of garlic, rather than a clove (seed). It also depends on the variety... here, I need a hardneck variety, whereas you, and Becky can use softneck varieties. Doing a little research and study pays off!

@@cynthiafisher9907 My concern is that the temperatures are too extreme that it will kill the garlic before it's able to develop heads from the clove. Molly gets -15, as her low. I'm in a zone where it gets even colder than that. So, why plant something that the extreme weather will kill it. Especially since Farmer's Almanac is saying our temperatures will drop to -40 F this coming winter. See my worry? I'm going to try it, plant a bulb or 2 of cloves, on the southern side of my house, where the house shields the area from the extreme weather, and mulch, as she states, and then cover that with burlap, weighed down with cinder blocks around the edges to keep it in place. We'll see if we're successful with that plan. Also, as I stated, the variety of garlic is also key, as I've researched. Hardneck varieties in my area are more suited to the extreme cold, than the more moderate temperate areas such as where Becky is located. It's similar to growing long-season onions here. Our growing season is only 5 months long, but we have the conditions of the arctic... midnight sun conditions, so long days of sunlight. But in other zones, intermediate or short-season onions are more successful. We have to know what we can grow and when to plant it. That's what I've been looking up. All of the recommendations I've seen for my area is to wait until very early spring to plant, as soon as I can till the soil to plant.

I have made the no knead bread in a glass baking dish that has a lid and I’ve also made it in a glass loaf pan that has a lid. Both turned out perfect! I just put the lid on for half an hour and take it off and cook it for the other 15 minutes and it tastes just as good as if I use my Dutch oven.😊 Love your videos!❤

Absolutely! Any dish that can take the heat and has a lid works. The lid is the most important part, you want to trap the steam inside.

My foster mum used to make bread in a loaf pan and as her lid she used a couple of layers of aluminium foil. It kept the moisture in and the last 10 mins she took the foil off to help the crust to brown

In case anyone wants to know I too make this same bread for about five years. I use to make it only in cast iron but then I wanted to make rolls from this dough. So I use a cookie sheet pan or a pizza pan and the rolls come out fine. I also use cast iron bread loaf pans and round cast iron too. It’s a great dough to experiment with I sometimes make raisin and cinnamon with some orange zest for a breakfast bread or I use seasoning to make a savory bread to go with pasta. I’ve used wheat flour and mixed white and wheat flour together.

Hi Becky! Actually I have tried making bread before I had my Dutch oven, and the idea of it is to steam the bread to puff up before it creates a crust. So you can try using a tray with boiling water at the bottom of the oven to create the same effect (as long as the oven is not fan forced. If it is you could preheat your oven extra hot, turn the oven off as soon as you put the loaf in, and turn it back on around the same time you would remove the lid of the Dutch oven (Hope it makes sense 😁) also, the scoring is great for helping the bread open up properly, even if they’re not sourdough. Your loaves look so pretty! ❤️❤️❤️

Garlic peeling tip that changed everything for me! Cut one end off clove and place in microwave for 20 seconds. Remove and squeeze the clove gently and it easily slides out of skin with the clove intact. You have to work fast once they’re heated or it sticks again when it cools. I grow hundreds of bulbs a year and freeze dry a good percentage of them. So this hack makes my life so much easier! thanks so much Becky for all the content you post, I love your channel!

@@cynthiafisher9907 I have tried that as well but didn’t work well. Smashing the garlic helps the skin to come off quickly, however, its just so sticky to deal with it. Took me almost a week to peel tons of garlic but its all worth it.

Hi, Pretty new at all this and I am enjoying your videos very much! I just wanted to add that you growing your own garlic is absolutely brilliant! The majority of garlic now is grown overseas and prisoners have to peel them as part of the sentence. Which causes health problems for their nails and hands. Even the top USA growers are in business with them and monopolize who can grow and will shut down any competition here and overseas. It is not only wrong the garlic is generally unhealthy. So I applaud you and all others who are taking care of their families and not letting conglomerates force everyone into unhealthy submission. Sorry I don’t generally try to sound mean or try to cause strife, however I just feel that even one person or one family doing the right things can make a difference for the positive. God bless you and yours and thank you again for all your hard work, we really do look forward and appreciate it very much!!

I love growing garlic - I grow about 90 heads , enough for the 2 of us. I grow hard neck and put aside the best 20 heads for the seed garlic for the following year.. Stratification is the correct term.

First, kudos to you for being a fearless bread baker! It’s a valuable life skill to be able to make bread. As a bread baker from a long line of bread bakers, I was taught to use white flour with heavier flours to get better dough elasticity and a lighter loaf. And I was encouraged to experiment to find the ratios I liked the best.

Yes, you can make the no-knead bread without a Dutch oven. I use a regular loaf pan and flip another loaf pan on top, creating that Dutch oven effect. Comes out beautifully every time!

Me! I am thrilled to see her post!! I understand the need to grow your own food. To know how ethicly it was grown and what level of organic is it. I have already planted 74 cloves of various Hardnecked Garlic and 17 cloves of Elephant Garlic. Yup stratification is planting in the fall. A few years ago, I could find no decent garlic to plant and when I finally got some, it was February, so I threw garlic in the fridge for 3 weeks and then I planted them . Not all of them grew but it was something. Brightest blessings.

The purpose of the Dutch oven is to create a steam chamber to set a good crust. Taking the lid off in the last 15 minutes is to release the steam and brown the crust. If you bake it without the steam chamber, you will have to place a pan in the oven below the rack you bake the bread on. When putting the dough in the oven, you pour boiling water in the lower pan to create a steam chamber then do not open the oven again. At the last fifteen minutes carefully remove the pan with the hot water so the crust will brown. Much easier to invest in the Dutch oven which can be used for so many recipes. Hope this helps.

Becky,if you want to get the most flavor and nutrition from your homemade bread,and less simple carbs you need to grind your own grain.Also, it's best to always grind what you will us for a recipe,to prevent nutrition loss..when I started grinding my own grain for bread or tabbouleh,my skin,hair,and nails grew like crazy,skin got so smooth and soft my husband noticed..grinding only takes a few minutes but the reward is fantastic.I bet your garlic peeling team thoroughly enjoyed your delicious cooking.Can only imagine how delicious your home must've smelled like..Can't wait to see how your frozen biscuits turn out.I bet they will be fabulous..sorry for the long comment,your fault for making us the viewers so happy and excited !

For those without a special tool, just use a serrated knife and score 3 lines on the top of each loaf. Still beautiful!! Thanks for testing all the flours!!

I managed to grow a whopping 2 heads of garlic last year 🤣 I planted a few cloves too early and we had a warm December, so they started growing! 2 managed to keep growing after winter! Lol a fun experiment for sure, and they were SO GOOD. Definitely going to plant more this year but I think I'll wait till the new year

Hi Becky, thank you for posting so many fun and informative videos for us. There really isn't much mystery about the difference in making yeast raised and sourdough starter raised breads when you get to the baking part because both are just different ingredients used in the dough to proof through one or more rest periods. So lightly scoring the top of your bread before baking (as you did) is functionally the same. That sharp crisp baked crust along the arch you cut is the best part in my book. Crunchy and yet a bit tender; it is a real treat.

You've made me give myself GRACE. I am new and I just love your channel ❤. I love how nothing bothers you and it gives me confidence. I'm older and have no family. You are on my tv all day and think I've watched all of your videos....more than once. Trying to get your recipes for biscuits, pie crusts, bread and all of the dehydration ingredients. I'm just one person but it's nice to have ingredients that are all natural. I just need to have a big notebook and sit one day to write out recipes. I have been looking forward to this video since you first mentioned your garlic prepping gathering because I LOVE, LOVE, LOVE garlic. And -- I put garlic in everything! In my opinion, garlic just makes everything taste better. I even love to mince it up and eat it raw on salads. Yummmmm! Anyway, I hope that you are proud that you grow your own garlic. I can see that it is a lot of work, but I think it is so worth it. Homegrown garlic tastes much better and you know where it comes from and how it was grown. Most of the garlic sold in the US is not grown in the US, it is grown in a country does not have our same standards for safety and does not tend to regulate its products. So -- another bonus is that you know your own garlic is safe! So, your new mantra could be "It tastes amazing and it is safe to eat," LOL.

"I was 32 when I started cooking; up until then, I just ate." "Learn how to cook, try new recipes, learn from your mistakes, be fearless. Garlic can be planted in the fall and into early winter, from October through mid-January. The cloves need time enough to develop daughter cloves before next summer, and planting later than mid-January will result in just one single large clove. In other words, the sooner, the better. I love the way you grow it in spite of the work involved! We love the REAL Becky!

I know whole wheat flour and other grains will soak up a lot more moisture. Doing a little research on how to adjust your liquids for your flours is helpful. Your bread looks amazing! 🙂

I suggest you try Einkorn wheat berries. They're sort of impossible to overcook and a really nice side with roast meats as well.

Fabulous video as always. If my oven worked properly I’d make some bread but the oven is 40 years old and has 2 heat settings….hot and hotter. Lol . Have you ever considered doing some live videos? I’m confident you’d do fabulous. I follow along with an beginning acrylic painting instructor named the art Sherpa here on KZbin. It’s a blast and has grown into very large fabulous painting community. I could totally see how you could do something like that in this space and I haven’t seen this done within the homestead/cooking space before. Watch the art Sherpa and you can see how it works. You have a god given talent of capturing your audience’s attention and keeping us engaged with your charismatic personality. You have the knack for teaching and inspiring others to explore new productive hobbies and not be afraid of failures if that happens. That’s no easy thing to do now days as when we have a plethora of things choose from to watch and read on social media and the internet. you have truly inspired me into growing a garden and got me interested in cooking and it looks like there are many who are feeling the same way. Keep up the great work. I look forward to every video you put out as they are well done. Now I’m off to make homemade croutons and then out to plant some garlic in a bucket. I remember from my childhood the various harvest "parties" we had at my grandma's house. We shelled butter beans, peas, shucked corn, snapped green beans, killed and processed hogs, etc. Oh the fun and fellowship. And my grandaddy grew tobacco so, there was the "putting in" of the tobacco too. My grandma cooked big meals like she did on Sundays and it was the best of times! I remember someone at one end of the table asking for a biscuit and it got pitched to them from the other end! And if you cleaned your plate, you might turn it upside down and get your pie served on the backside! What fun times! Your meal looked fantastic! My Mama and her remaining siblings/in-laws get together every year to shell pecans after she takes them by the bucketfuls to a man in a nearby town who dumps them in a machine that cracks them. She usually cooks a big pot of chicken and vegetable soup on those days. I miss out on that since I'm the daughter who lives farthest away...

I made up a bunch of biscuits and froze (I flash froze them on a cookie sheet) them a couple weeks ago. I just pull them out and cook as usual (maybe takes 5-10 minutes longer). Your bread looks so good. I need to get back to making no knead bread now that it's cooler.

I found that a great way to prep garlic for easy peeling is to soak the cloves in water for about 5 to 10 minutes prior to peeling. Works great for onion skins too.

Long time fan first time poster. I am a professional chef with over ten years experience and have to say I enjoy your cooking videos. My only issue with your 40 garlic chicken was how you put half cooked or seared chicken in a metal container and left it in the fridge overnight with the potatoes, onions and garlic sitting in stock. That is a big no no, cross contamination and Salmonella is breed through theses practices. You were better off cooking the chicken, and reheating the day of. Thanks.
