Hi Kara do you find that ganache is better than buttercream? When I buttercream my cakes (using the cake circle as my guide) then I put the fondant on, the buttercream moves and ripples. I didn't think I was adding too much buttercream? Thanks

Yes and no...ganache is more solid and sturdier as you cover in fondant. However I have found paneling my fondant works great especially on buttercream covered cakes. I often use buttercream now as the customer prefers the taste but I love ganache. Search my videos for how to panel a round cake with fondant.

Hi Kara! how do you use a cake board under the cake for stacking? if the acrylic is .5 inch larger than the cake board, wont there be a buttercream/ganache overhang? isnt that problematic when covering with fondant or stacking? (i hope im making sense here! Lol)
