Thank you! My grandson got sick so I am freezing a fully decorated cake fondant covered cake for the first time. Encouraged it will be fine.

@@sufiamufti2079 thank you, he is fine. We celebrated his bday when we were all together on Christmas Eve. Actually was much more festive with a piñata and other bday games we wouldn’t normally do on CE. He was very happy and everyone, adults included got highly involved in the games. We’re going to include a piñata next year too. So new traditions! The cake was moist, the fondant didn’t crack nor did the colors bleed. It was a Storm Trooper helmet, white/black/grey fondant. I followed the directions and defrosted 2 days in the fridge with the plastic wrap still on. The situation forced me to learn a valuable skill which will be so helpful with future family and client cakes schedules. 👍

@@aurel2660 I thawed it in the refrigerator for 2 days still full wrapped in the plastic wrap. Tasted delicious, no problems with flavor, texture and the fondant didn’t sweat either. A big game changer now! I can plan ahead.

Thank you. Did your cake have frosting and fondant, or all fondant? When you thaw it in the fridge, how do you know that by keeping the plastic wrap on, it doesn't ruin the frosting? What would happen if we thaw in tje fridge without the plastic wrap?

Hi, could you please tell me how long after its out from the fridge wil lit stay at room temp. So i have to do a cake for Saturday noon. So i e had the cake from freezer to fridge on wed and Thursday i still need to do some deco on the cake so is it ok keep it out the whole of Friday till it will be consumed on Saturday. Pls help

Hi , I’m doing a fondant covered cake but it will be someone else thawing it for me can I box the cake and just wrap the box so that they don’t have to touch the cake and risk damage as they aren’t cake makers themselves - thanks 😊

Thank you so much for this video! I was stressing about whether I could freeze a buttercream with fondant accents in a boxed wrapped in saran wrap. Glad to hear it can be done! The cake will also have an edible image on it. Do you think it will be OK as well or will itc weat?

Soo great .....when will i wrap the cake.. As soon as it is finished or after few minutes... Will the cake get damaged when the wrapper touches the cake. ?.....can we keep the fondant cake in box and wrap the box... Which one is better ..for selling after 2 days is it good to freeze or keep it outside... Pls reply

If you have the space it would be best to place the cake in a box and then wrap the box in Saran Wrap. If you don’t have the space, make sure the cake is chilled from the fridge, then wrap in Saran Wrap, then place in freezer. Move the frozen cake to the fridge (do not unwrap it) 24-48 hours before delivery, as it defrosts in the fridge, condensation will build on the outside of the plastic. Wait until it stops condensing and has defrosted to fridge temp before removing plastic. It is best to not have the plastic directly on the cake. When I wrap, I start with a loose wrap around and continue to wrap sealing off the air, being mindful that the first layer is barely touching the cake. Try adding a few toothpicks in inconspicuous place in the cake to help hold the plastic away from the fondant. Hope that helps.

Hello Kara, thank you for showing us how you freeze a fully decorated cake. How long would you say a cake masked in ganache and then covered in fondant will stay fresh in the refrigerator if its put inside a cardboard moving box? Please advise.

Gloria Chung for sake of freshness for the customer, I advise no longer than 7-10 days. But if for family and no fresh fruit filling much longer 🤗

Yes. Place buttercream cake in freezer for an hour to firm up, then either place in box and wrap or as I do, wrap cake gently with plastic. The buttercream should be firm and will not mess up when you wrap in plastic. Stick back in freezer then move unwrapped cake to fridge 24-48 hours before due date. Unwrap cake while still chilled. Do not let cake come to room temp while still wrapped as the buttercream will likely get messed up when trying to remove plastic wrap.

Hi: Have a question, I need to do an elmo cake topper for my baby's bday cake but I don't know if I should do it in fondant or gum paste, what do you recomend? Also if I make it and freeze it how many days in advance should I defrosted? Thanks

If it’s a topper you can use gumpaste or a fondant and gumpaste mix... let it dry and store in a Tupperware container in a dark cabinet. The topper can be added to the cake before it is presented. Any item you can keep off the cake and store in a cabinet is best. Do not freeze anything the can be added later.

My problem with this is that once it comes out of the fridge into room temperature, it sweats and bleeds like crazy. I live in a warm climate and there's just no way to keep the cake cool all the time. How do I overcome that? I usually avoid that stress and decorate no more than a fay in advance

Anika Sheppard I would suggest you store your cakes in a cardboard box in your fridge and set the temperature of your fridge to 40 degrees... leave the cake in the box on the counter to let the cake gradually come to room temperature before removing it from the box.

Kara Bustos i left my cake fully decorated in the fridge overnight for the the next day then when i took cake to the reception (park) the fondant details and frosting melted :( do you think this happend because of me putting the fondant details overnight on my buttercream cake?? Thank you

I work 35 hours a week, early morning and finish 1pm 4 days, and 6pm 1 day. I,ve raised 5 children on my own for the last 12 yrs, ranging from 16 down to 3 at the time. I worked at night in a bar also. I make cakes on the side to supplement my income. Tired is it? I don't even know my own name at this stage!

Ok, so freezing or refrigerating cakes with fondant won't be destroyed as long as you let it to come a certain temperature in the refrigerator?

+Teneta Robertson the key is gradual temperature change. Moving the wrapped cake from the freezer to the fridge (which is set to 40 degrees) for 24 hours, then move the wrapped cake to the counter in a 65 degree room, the cake is never shocked with big temperature changes. Therefore it doesn't sweat. Another tip is to keep your decorated cakes in boxes in the fridge if your fridge has a lot of moisture
