Fabulous, thank you. The chocolate and peanut butter is now one of my staples (but split into two servings). A tip from me, blend your chia seeds. You absorb the omega 3 better when blended, making this a super healthy dessert.

For those having problems with the seeds falling to the bottom and not setting up properly. Stir the chia seeds like a few minutes after they have had time to get jelly like or glutenous in the milk so they will stay throughout the pudding and thicken it evenly.

If you put the mix in the blender for 30 seconds it thickens instantly. The little seeds breakdown so it looks different.

Tip: if you don’t like the crunchy texture of chia seeds, just put it in the blender after adding all the ingredients and boom, chia pudding

I may try these! Like you, I think it should taste good, no matter what. For the coconut milk, are you referring to the type that is like the almond milk but made with coconut milk or the can that is used in Thai recipes?

@@Bridgeitta1 try to increase the quantity of chia seeds i guess... I did not follow the measurements. Just followed the recipe. Also, i stirred them twice or thirce properly before finally going to bed. I hope this helps...

Please help! I followed the instructions exactly as they are written on your webpage for the coconut chia pudding and i left it overnight but the chia seeds didnt gel! It was still super liquidy. Maybe to much liquid? It was 1 1/2 cup coconut milk right?

I remember making a chia seed pudding and leaving it overnight but the next day it was still liquidy and didn’t have an actual solid shape. Is there too much chia seeds or too much milk that makes it liquid?

Probably to much liquid I made that mistake when I first made a pudding ended up tiring it into a smoothie. some youtube video I found used measurements of 1/2 cup of milk and 2 tablespoons of chia seeds worked perfectly when I used these measurements

I had the same problem! I refrigerated it overnight and had to strain off some of the water. I had a feeling it called for too much milk.

I tried this, but I think it needs 1/3 cup of chia seeds rather than 1/4. The 1/4 didn't turn into a pudding consistency at all, even over night.

Katie Hares I know this is an old post, but I read that you have to stir it really well once, then stir it all over again. Apparently it clumps really easily if it isn’t at least double-stirred.

Love chia puddings. No doubt the peanut butter and chocolate one is delicious, but at over 600 calories, it definitely wouldn't be a go-to breakfast for me. Would be amazing as a weekend treat through.

Just calculated the vanilla coconut one. If you used 1 cup of canned coconut milk and not a dairy free alternative made from coconuts, it tallies to 870 calories! With a dairy free milk/mylk it totals to 550. Sorry if that annoys anyone, it's not my intention at all, I love Laura's recipes and will definitely try the peanut and chocolate one soon, but just wanted to share that although they're undoubtedly super tasty, if you're on a new years health kick maybe half the portion size.
