Ooh, something I know! Roux (pronounced roo) is a equal mix of fat and flour. Add milk and it becomes bechemel. Add cheese and it becomes mornay or add stock and it becomes veloute (clear stock) or espagnole (brown stock). The internet says you can also add tomato for 'sauce tomate' If you cook roux for a long time, it will get darker and darker and darker - for a genuine cajun roux, you gotta cook it stirring constantly for about 40 minutes to get that velvet chocolate brown for jumbalaya. I made cheeseburger soup for the first time a few months ago and it's a family favourite! In Australia it's super rare to add cheese to soup - only on top of the bread in french onion.

A friend of mine bought us some elderberry syrup once and I looked at the ingredients and there was no sign of elderberries at all! It was mostly corn syrup! How they can call it that? That’s insane. Thank you for your recipe, I’m excited to try it.
