i have been married to a wonderful nigerian american husband for almost 12 years now and this is my 1st time cooking this fabulous beans recipe. When he tried this, he loveeeed it very much and starts to ask me to do it more often. knowing that he is very picky especially when comes to his childhood food, his compliment makes my day. he even said that this beans tasted the best!! - i did mine about triple the amount. i omitted the crayfish because i dont have it on hand. i did mine in pressure cooker for about 18 minutes and with quick release. Hi Lola looks good I will be making this tonight with Smoke Ham. My husband used to have a problem with beans just soak it with Onions Garlic and GINGER the Ginger is the remedy there will be no more problems with soaked beans. Thanks for the video

Lovely sister! That was very nice of you to teach this method. It’s amazing. But I will suggest you wash the beans after 10mins of cooking before adding anything in it. There you will be amazed to see almost black pesticides. I just want my sisters be aware, I don’t want anyone sick. Love you all!!!

I have dried the soaking method is still gives me heart burn. I recently discovered a cube that kills heart burn in beans. .I also love plantain. It looks absolutely yummy.

You can try Achiote (annotto) oil. It will not have the palm oil taste but will still be delicious.

I would like to make this but where I live we have hard water and so it is difficult to cook dried beans, especially black eyed peas. Normally I add vinegar to soften them, but will this impact the flavor of the dish?

I find it difficult to find crayfish powder? what is the name of the brand you're using? also, what type of seasosing powder are you using? I really want to try this recipe!

Try Maggi seasoning cubes. If you want crayfish powder substitute you can get some whole shrimp (devein them) and put them on a baking tray and bake them (on fairly low) until they dry out completely. Afterwards, you can blend this into a powder and you are good to go! It’s just an umami addition and not wholly necessary but it does pack a serious flavour. I imagine you might even use some smoked paprika- just to give it a bit more depth

You need to smoke on wood/charcoal to get the smokey taste. Though you can play around to get similar effect like using the liquid smoke (sold in grocery stores) or place a hot charcoal in the oven (quite a risky but it works).

Honey beans is a popular beans in Nigeria. It is naturally sweet tasting. Most people prefer to use it for stewed beans but for some reason my family likes the regular black eyed peas more. Its sold in African stores (cheaper) and you can also get it on Amazon (not so cheap). I hope that helps?

Cover the peas with water add a tbs of baking soda and 2 caps of bottle of the apple cider or regular vinegar. Also skim off the small bubbles or foam while they cook. This foam is gas.

Please advise. When I soak the beans over night, in the morning the morning, they seem like they are sprouting... These black eyed beans take forever to cook... Please help🙃😢. How do cook it so smoothly...?

It takes about an hour to cook them soft on medium to high heat. The beans shouldn't sprout overnight but if that is the case for you, you can soak for about 4 to 5 hours. You can also cook it in the crock pot, pressure cooker or instant pot. I hope that helps?
