I pasteurize my mix all together with the exception of half the cream. I add that to base once it’s cooled. This gives a cleaner dairy flavor and less of a cooked flavor. The cream is already ultra-pasteurized anyways and it’s going in with the rest of that same cream. That shouldn’t be a problem, right? I started using this trick because I learned it from salt and straw, who doesn’t cook their cream at all with the rest of the pasteurized mix. They add ALL of it at the end. What do you think of this?

We make and pasteurize our base from scratch in a pasteurizer. It's labor intensive but we get a great fresh base made as needed.

That's a great way of making a truly proprietary product. Unfortunately, many local municipalities try and limit this happening in the US

Thanks. Does the same apply say if you are making a smoothie that contains eggs and milk? Also what do you think about replacing cow milk with coconut milk and using cornstarch instead of egg yolks. I want to make ice cream without cow milk or egg yolks.

I dont think the smoothie process applies but you would need to speak to your health dept to confirm. You can use coconut milk but you will need a bulking agent to increase solids. Corn starch can work but leaves the end product a little chalky

Is there a machine that can do both soft serve and hard ice cream or does one have to purchase two separate machines
