It's awesome when you hear a word and you know where that words comes from but the context changes. Adobo is from Spain, but Spain occupied Phillipines and had history with the country for 300-400 years or so and they put their own twist on it. That's awesome to see the differences in style. I've seen Spanish and Mexican adobos but never Phillipino influenced. Nice recipe!

Wait no eggs 🥚 on the fried rice? as a fellow Filipino this is consumed in the morning usually. But this is a nice work! Something to consider/experiment.

Adobo Rice has no onions just a plenty of garlic. Filipinos dont put onions on fried rice. Plenty amount of toasted garlic is also an important ingredients of every Filipino Fried Rice and your adobo rice has little amount of garlic. I am Tagalog Filipino and I realy know how to cook this dish. Its not uncle roger approved.
