spell idea, perhaps: Silvery Tines (the things at the end of the fork) 2nd level spell, much like Silvery Barbs. Reroll any one roll...but the next one in line is at Disadvantage (classic "reroll, take the lower") Might be a fun way to keep Turkey Gizzards off the table, but runs the risk of, like, fermented green mustard

One thing I can possibly see working for the gizzards is chopping them up and mixing them with mayo, not sure if that would work with the rules though.

Gizzard is actually a nice dish, but I have never had it pickled. Also, I am Hungarian and I have never seen that kind of cheese during my 41 years of existence. We make cottage cheese mixed with spices and a bit of a sour cream to make creamy sandwich toppings, but that thing, and its name, is totally unknown to me.

So, for the transmuted Gizzards, how are you handling that? Do you have to take it next sandwich? Or are you going to add it to the d12 table as another main roll until you get it, barred the last 2 ? I kinda like it as the latter of the 2 makes it more interesting than, "welp next sandwich is just gonna suck."
