After 20 years of baking, I never thought an eggless VANILLA CAKE could be this good

I don’t think I’ve ever been as frustrated when recipe testing as I was when it came to trialing out an eggless vanilla cake! 😂
Well, I can laugh about it now, because after some drastic changes to the methods I was using, I finally came up with the perfect eggless vanilla cake! It is soft, moist, flavourful and you wouldn’t have a clue that it didn’t have any eggs!
INGREDIENTS:
- 2½ cups (330 g) flour - regular, all purpose
- 2½ tsp baking powder
- ½ tsp salt
- ¾ cup (185 g) yoghurt - regular (not Greek), room temperature
- 1½ cups (300 g) white granulated sugar
- 1½ tbsp vanilla essence/extract
- ½ tsp baking soda
- ½ cup (113 g) unsalted butter
- ¼ cup (50 g) unflavoured vegetable oil - I use canola
- 1 cup (240 g) milk
Bake at 160 °C (320°F) with the fan on for 28 minutes, or until a toothpick comes out clean. If you don't have a fan oven, bake at 175 °C (347°F).

This is the best recipe for an egg-free cake. I finally made a cake for my daughter, who is severely allergic to eggs and never had a normal birthday cake. Thank you so much for this recipe, I followed your instructions exactly, and the only difference was I needed to leave the cakes in the oven maybe 15 minutes longer than you suggested, for the toothpick to come out clean. I’m not sure why that was (I had to use spring form pans maybe that affected it?) but I am sure that the cake turned out amazing, and was an absolute hit! You made my child’s birthday extra special with this wonderful recipe. Thank you so much. My husband thought I was crazy to try making an egg free cake and he’s VERY picky about food and a great cook himself, but when he tried it he complimented this cake several times, so I know it was definitely good!!

I made this cake for a my relatives who don’t eat eggs. I used ermine butter cream and the cake was so moist! It’s better than some vanilla cakes with egg that I have tried and definitely the best egg free cake I have tried. Most of the egg free cakes I have tried have a weird and oddly sweet taste but this one was perfect!
