Sticky BBQ Ribs (Vegan)
Wet Ingredients:
1 tofu square
3/4 cups kidney beans
1 1/2 Tbsp better than bouillon seasoning
2 Tbsp sesame oil
4 Tbsp liquid aminos
1 Tbsp agave syrup
1 1/2 Tbsp liquid smoke
2 Tbsp bbq sauce
1 cup water
1.) combine all the wet ingredients together in a mixing bowl.
2.) Blend the tofu, beans, and 1 cup of water until smooth. Combine it with the other wet ingredients. Mix well.
Dry Ingredients:
4 Tbsp nutritional yeast
3 Tbsp garlic powder
3 Tbsp onion powder
2 Tbsp beet root powder
1 Tbsp chili powder
1 Tbsp paprika
2 1/2 cups vital wheat gluten
1.) Combine dry ingredients together in a mixing bowl.
2.) combine both the wet and dry ingredients to make a dough.
3.) knead the dough for 10 minutes to activate the gluten. Use a mixer with the dough hook if needed.
4.) cut the dough into two pieces and shape into a flat piece in the shape of ribs.
5.) cook the flattened dough piece on an oiled griddle until browned on both sides.
6.) steam at a simmer (not boiling) for or 1 hour 10 minutes flipping it halfway through.
7.) your seitan is now fully cooked. You can rest it in the fridge overnight or use it the same day.

@@yessicainfante831 Hi Yessica, this is a very nice basic recipe with ingredients that are easily available.. Thank you. I add shredded jack fruit to my seitan ribs. I grow jackfruit but I have also used to the jackfruit canned in brine. I remove the seed pods and the hard bits. I also like adding some grounded shitake mushroom oowder and jerk seasoning. Makes the texture and flavor of the seitan like ribs ( or what I remember they are like. I haven’t eaten meat in 49 years😉) Thank you again for the nice recipe.

Also try mixing in strips of pre-soaked rice paper to your dough just before you are finish kneading it. it will give it a more meat-like texture mimicking fat or sinew.

This recipe was my first attempt at seitan. OMG. Wonderful. Lot of work but it was definitely worth it.

@@yessicainfante831 you should also check 'Plant Based Dads' Joey says make sure you are using the correct tofu for the application. Shelf Stable, Mori-Nu, seems to be what works for blending. and (Mark) Sauce Stache is great too! (just no MSG please ... lol )

Thanks for your amazing videos! I attempted to make this last night and for the most part it turned out delicious, although my family thought it was a little bit too spicy due to the amount of chilli powder. I wonder if 1 Tbsp Chillipowder may be a little too much, and might half it next or leave it out completely?

Your videos are absolutely amazing and you are getting a following very quickly. I would recommend that you invest in a better microphone if you wanna improve your videos. I don't think you need a camera upgrade just yet, however, a camera stand of some sort (a makeshift DIY works totally fine for the most part) would really increase the production quality as well. Don't get me wrong i'm not trying to bash your video production. I simply wanted to help and advice since i really enjoy your content.

Has anyone tried to cook this on a BBQ With a smoker box to give it smoked flavour? The liquid is important and can be added to BBQ as well I'm sure. I may try this smoked. Thank you so very much for sharing your beautiful recipes.

Hello! I actually tried smoking these on my stovetop smoker. I seared them first and then gave them 20 minutes in the smoker before steaming. They smelled really good but the smoke definitely overpowered the whole dish and left a very strong lingering taste in my mouth for hours.. dough is porous, not dense like meat so I guess it just soaked in all that smoke like a sponge. Needless to say, I ended up throwing it away, it was just too smoky and bitter. All my hard work 😭😭😭 So I would say pass on the smoker and maybe just add a couple tablespoons of liquid smoke to your steam liquid to give it a subtle smoky profile.. hope this saves you from wasted product!

Seitan is the gluten/protein that is separated from dough. You do this by washing the starch out of the dough. You then season the dough and cook it. It’s very tasty!

Thank you, I haven’t done it that way, but I don’t see why it wouldn’t work. You might have to rehydrate while it’s roasting so it doesn’t get too crispy.

Thank you for the video. What have you found is the ideal gluten to liquid ratio? I would like to make a small batch with different seasoning. And how do you known when it’s fully cooked?

I normally use 2 1/2 cups of VWG to 1 to 1 1/4 cups of water/liquid. It takes 1 to 1 1/2 hours to cook depending of the size of dough ball. Smaller pieces take 40 minutes to 1 hour to cook.

TFS were you able to eliminate that ‘off’ taste that vital wheat gluten gives off? How would you make this with your washed flour recipe?🧐🤔

I honestly think it’s all the seasonings I use that mask the gluten flavor. I had my omnivore brother try it and he said he didn’t taste the gluten flavor at all. I do plant to make a WTF version of this soon 😉

D K, if you’re using Bob’s Red Mill brand, that’s why you get that strong wheat taste. That brand had a huge amount of protein, I think, but someone in a seitan group I’m. In wrote that the amt of protein has been reduced. Therefore, you may not get that wheat taste if the protein was reduced. HOWEVER, I would triple and quadruple the spices and seasonings when I used the Bob’s brand, and I still got that wheat taste. I switched to Anthony’s brand now, and I don’t get the wheat taste.

Put a bit of vinegar in your wet mix. It somehow helps with the taste.

I don’t have elevated taste buds, meaning, I can’t tell you what herbs, spices, seasonings are in food, like a lot of people can, BUT, no matter how much vinegar, herbs, spices, etc. I put in the Bob’s brand of VWG, I still can taste that strong wheat taste. I once added too much vinegar, and I could taste that. I finally switched to Anthony’s brand, and I don’t get that after taste. But, the new thing is washing flour, and with the first washing, people save that water, and make bacon and pepperoni out of it.

You can simmer it in broth. Just make sure it’s not boiling or it will make your seitan spongy.

@@d.lightfultv2231actually it's just your opinion that is dumb, or more correctly, ignorant. This recipe is to show meat eaters they don't have to eat carcinogenic, dead animal pieces to get tasty meaty food. Meat eaters don't necessarily like meat (no one eats a chicken, pig, lamb or cow meat plain without seasoning or marinades), they like the meaty texture and taste and mouth feel. In other words, you can have your meat and eat it too - without cruelty and health-risk.

@d.lightfultv I love being vegan, however 1 - I used to love the food my parents and my grandparents before them made, it’s called culture, it’s called heritage, it’s called tradition, I think it is great to be able to bring those on the table without compromising my health, without harming animals, without endangering the environment. “I don’t care about my health, or the environment and I hate animals” said nobody ever 😁 2 - cooking is about transformation, you make grains into flour then into cakes, you make carrots tender, you make fruits into wine. Some human idiocy we’ve been practicing since we’ve mastered fire. This is not different from that. 3 - why are you so triggered? why do you resent us so much that you feel the need to post mean idiotic comments to a friendly family channel? Why do you feel personally attacked by our behavior? You should really dig into that resentment before it eats you up... especially if your stomach is a graveyard 😂 Peace off (incentive on peace) ✌🏾
