Can't beat a good Chinese style roast pork. If you can get your hands on a No 11 scalpel blade, you can cut criss cross patterns on the skin. Score deep enough to cut through the fat but stop when you get to muscle layer. Pour boiling water over it, pat dry, brush with vodka or bai jiu and leave overnight in the fridge. Sprinkle with Maldon sea salt flakes, then air fry as per normal. I promise you will enjoy the extra crunchy skin.

Hi Chef Is indeed super crispy pork belly by air fryer. I noticed you did not put spices at the bottom of the pork belly. Must I put a aluminium foil on the fryer tray. Thanks for sharing
