I'm so thankful I have found your channel. My partners mother is from Mexico and she was diagnosed with diabetes a few years ago. The disease is taking her eyesight. So I'm switching roles with her and am now in the kitchen. Currently I have an organic garden and love to juice for them. I'm taking the whole family off of meat and dairy. I want to make this transition as easy as possible so finding a channel that makes vegan Mexican food feels like a God send. Thank you!!! I hope I can help reverse her disease. My husband is from Mexico and I’m not; so, I struggle with making anything from there that tastes authentic; but, This was easy and delicious. Now, you’ve gone and added healthy to the mix!!! I love it!! Most of his aunts and uncles and his mom have passed away due to diabetes or cancer. I don’t want that to be his fate. Glad I found this on KZbin. It will be one of my monthly recipes. Honestly I do not know how to describe the flavor amazingness of this meal. I have never had tacos like this before and I’m so glad I made them tonight. Even my three-year-old who hates onions and spicy is killing this meal asking for seconds. I will definitely be making this at least twice a month if not every week this is so so worth the time and effort it’s amazing and I thank you for this recipe.

@@airamcooks yes I saw the tip, but all I could find was the jackfruit in brine. I literally went to five different stores looking for it but ended up at a Asian market that carried the canned in brine. Either way it was incredible!

@@atlsongbyrd6084Hi, my opinion here... Recipes are guides.. I've been cooking for 50+ years... my suggestion is to use the ingredient(s) you have on hand or the one(s) you like. The salt substitution should not make much difference. Using one chile just gives it that single flavor instead of the mixed flavors. It will still be delicious. Homemade sauces, like the one in this recipe, are soooo worth the effort. Experiment and have a good time cooking. ❤

Omg!! My son loves it. He is so picky, yo puse el jackfruit en la olla de presión por 30 minutos y lo dejé reposar 20 más con el vapor y no necesite hervirla 2 veces y use una mallita de esas para comprar la verdura de tela para quitarle el líquido y funcionó súper. Aún sobró mañana haré los quesatacos 🤗🤗 la comida sabe mejor al otro día. Será una bomba!!!!!!!!! Gracias por la receta.

Came across you yesterday while researching vegan recipes and made it today. It is "SO DELICIOUS" and gave a whole new meaning to jack fruit. The double boil method really takes away the brine and combined with the broth sends it to a whole new level. Thank you for a new favorite dish!!

I want you to know that I made your recipe over other KZbinrs and it was absolutely deliscious! Instead of Magi I used a dark soy/ seasoning sauce I had. Growing up in Arizona, Mexican food is a staple in almost all households whether you are Mexican or not, however I had never had Birria. What a great way to experience these flavors VEGAN 🌱! A non vegan friend of mine who comes from a traditional Mexican household told me these were spot on and when I make them again to please share. I’ve been wanting to eat these for so long. I became pescatarian shortly before the trend popped up which reminded me that i had never tried them. I’ve been spoiled by growing up with an outstanding chef of a mother - which became a problem as i realized most vegan/vegetarian versions of dishes are created by wypipo with the tastebuds of buzzards. I just made this tonight. At the moment I’m letting the birria cook for 45 mins and I’m also making the side spicy salsa. My daughter is a big fan of birria tacos but we vegan so I hope this meal makes her happy because I followed every step except using the maggie liquid I couldn’t find any so I used browning sauce. Probably the first birria recipe I've seen (both vegan and non vegan) with no tomato. My guess is the Maggi contributes to the umami in the way tomatoes normally do? Very cool!

Seen this months ago FINALLY made it and omg bomb only thing is I’m Puerto Rican and I can’t do spice lol idk but mine was super super spicy without the extra chili sauce. I was sweating my bf on the other hand LOVED it had 4 bowls. Very good but how can I make it to enjoy it fully

Thanks for the feedback love! 💖 Happy you tried it! & It shouldn’t be spicy if you removed all the seeds & veins from the guajillos & the pasilla pepper! You can also double rinse them under water to ensure no spice translates to the finish product. (from any seeds or vein) Pasilla is a mild pepper but guajillos can be like a dull version of a jalapeño! & I know sometimes we are sensitive to it. You can also try a smaller amount of guajillos, but I’m sure you’ll be fine after rinsing well 💖

I tried your recipe and it is delicious! I have one tip to share with you. After you cook the jackfruit for the last time, drain all the water but keep the jackfruit in the pot. Put it back on the stove on very low heat and use a potato masher to separate the jackfruit as much or as little as you want. Because if the heat as you mash it, all the water left will evaporate. Just be very quick and be ready to turn it off right away or the jackfruit will stick and burn.

Yay happy you liked it! :) & I love this tip, it is a great one indeed when having jackfruit in brine!!! ☺️ I have actually been using jackfruit in water recently not in brine so it actually completely skips the boiling method. All it needs is some rinsing and to be shredded then ready to use. So much quicker 💕 Cuts down that 2 hours!! I have it linked in my updated description!

You can get a cheese cloth and use that to squeeze out the water from the jackfruit instead of just using your hands! 😊 I do that when making latkes since the liquid from the potato needs to be gone to make them crispy !

I wanna say this makes me wanna cry ok so I went vegan my family is iffy well we’re at first I live in a Panamanian and black household and we would have meat with every meal DIDNT matter what it was always rice and some sort of meats pork tails and pig feet tamales around Christmas time etc chuletas all meats... when I went vegan I thought it would be impossible until I decided to investigate other ways to make the meals I grew up with or even just the flavors cause technically meat is only a texture we craze cause tbh it’s all seasoned with plant based seasoning and herbs... I even conquered making vegan fried fish and baked Mac and cheese to the point it make me not even crave the real thing and watching this video makes me even more excited I will definitely have to make this recipe!!!❤️

One small modification I made was make it with Jamaica flowers bc thats what I had in my pantry but it still came out super good. Awesome recipe, you don't have to strain the sauce it'll still be great unless you like a smooth broth. A lady in Mexicali used to sell it without straining and it was the best!

Tip for making squeezing out the water for the jackfruit a little easier. Use a tea towel or cheese cloth. Fill it with the jackfruit in the middle and wrap it like a pouch, then twist the end to squeeze out all of the liquid. I do this with just about anything that you need to squeeze dry.

Hi Airam; We made this recipe and are very happy, in particular my 16 year-old. Thank you. My one question, please, is about the chile sauce: ours in no way, shape, or form resembled yours. Ours was like water, not chunky and sumptuous like yours; it was also w-a-y salty. What did we do wrong? We followed your recipe of 25 chiles de arbol, 1 tsp salt, 1/2 cup water, 1 garlic clove. Made this tonight...man oh man was it good! This is the second recipe that I've tried...it will be the last...I only made slight adjustments to the peppers used...and didn't make the second side sauce...hubby can't do spicy, spice. LOL...Thank you so much for an excellent recipe!!

Just made this and I have to say.. 10/10. The flavors are so intricate, I can’t even describe it. Def worth the 3 hours of cook time! That being said, I might go on a hunt for the jackfruit in water you linked haha Thanks for filming this! It’s so nice to have meatless, authentic tasting, Mexican options! I’m totally gonna make it for my parents and see if they even notice 😎.

These were very good when I tried the only thing for me I believe it wasn’t spicy as I would want next time I’ll add Chile de árbol to the broth but I guess that’s just my personal preference but I definitely enjoyed it as well as making it, inspiring tbh
