Lovely and tasty homage! I’m Mexican and grew up using these chilies for base sauces of many dishes. This sauce in particular is very versatile. I use mine for enchiladas and pozole. You can also pour it over fried or baked potatoes 😋

Working my way back to vegetarian & plant based so this looks so yummy! Very similar to how I make chili. For extra bit of smokiness toast the dried chilis in a pan before cooking them in the water. I think I’ll try this out with jackfruit cuz I don’t have soy curls at the moment! Thanks for sharing :)

Also vegan mozzarella cheese is good. I tend to find that when it comes to vegan cheese mozzarella is always a good choice Also idk what queso blanco is in this context because i missed the tiktok trend of it but queso blanco literally translates to white cheese, but there is from what I know there is an Americanized "queso blanco" that is white nacho cheese
