氣炸鍋脆蝦釀涼瓜:
材料:
急凍蝦1塊
泰國涼瓜1條
處理:
1. 蝦用清水解凍,擎乾及索乾水分。
2. 輕手拍扁蝦,加入調味料:
a. 生粉1湯匙
b. 鮑魚汁1茶匙
c. 油1茶匙
攪勻。
3. 洗乾淨苦瓜,切開大約1厘米1件,刮走苦瓜囊。
4. 將蝦膠釀入苦瓜,蝦膠釀多一點。
烹調:
1. 放錫紙在氣炸鍋。
2. 掃少許油在氣炸鍋底盤上。
3. 放苦瓜入氣炸鍋。
4. 掃少許油在苦瓜上。
5. 撲少許生粉在苦瓜上。
6. 用200度氣炸11分鐘。
7. 預備豉汁:
a. 生粉少量
b. 糖1/2茶匙
c. 豆豉醬1茶匙
d. 60度水少量
8. 在氣炸完成前4分鐘,放豉汁在氣炸鍋中間,一同氣炸。
9. 完成,上碟。
Airfrying stuffed bitter gourd:
Ingredients:
Frozen shrimps 1 pack
Bitter gourd 1 No.
Preparation:
1. Defrost the shrimps with tap water, hang dry, dry with kitchen towel.
2. Slap the shrimps lightly, add seasonings at the same time:
a. tapioca starch 1 tbsp
b. abalone sauce 1 tsp
c. oil 1 tsp
Mix well.
3. Rinse the bitter gourd, cut with 1/2" length, remove the seeds at the same time.
4. Fulfill the centre of bitter gourd with shrimp paste.
Steps:
1. Put a sheet of aluminium foil in the airfryer.
2. Brush some oil on the foil.
3. Put bitter gourds in airfryer.
4. Brush some oil on bitter gourds.
5. Put little tapioca starch on bitter gourd.
6. Airfry at 200 C for 11 minutes.
7. Prepare the sauce:
Tapioca starch little
Sugar 1/2 tsp
Preserved 1 tsp
bean paste
60 C water little
8. In the last 4 minutes before complete airfrying, put the sauce in the middle of airfryer until the airfrying time is finished.
9. Completed. Serve.
