This is not easy, a lot of work. But the good demo and explanation does remind us why Alderic could qualify to cook on national TV. Anybody can do a taste review on KZbin, but not everyone can cook and understand the science and mechanics behind it like this.

Been waiting all week for this video alderic, learnt alot from this video on how a tonkotsu broth is actually made and definitely in my eyes look like a 3 plate due to the effort and dedication put into the dish😂😂😂 cant wait for the next video on what food will be next, time to try bari uma! Great video! Appreciate the effort, ramen is not an easy dish to make, let alone perfect. And this looks great, especially the charsiu. Just wondering why did it cross your mind to cook the noodles inside the broth? Surely from your experience, research and various visits, you'd have known to cook the noodles separately?

thank you! I just got lazy, ironically. I think I would have gotten away with it had I not gone so heavy on the dusting flour. restaurants cook the noodles separately because they have to do many batches of noodles and the starch will build up, I figured just making one bowl should be fine.

This is easily the best idea from all the requests so far. Cos the bak chor mee is like too “similar” to ramen. Chao tow kway(i like) but too “similar” to char kway teow. And anything angmoh is like got the burger and steak liao. I think this series is primed for prata. And… i personally think we need to save prata! If u dont count mamaks serving 200 items like briyani and kopicinnos, there is a dearth of prata specialist stalls in singapore. (My personal theory is that prata is one of those hawker items with a price curse. People expect kosong at $1. Eat two kosong full liao. Hawker only earns $2. So hawker have to diversify and sell other items, and the kosong prata standard suffers. )

okay so my partner and i were discussing what alderic will possibly do in the next series. So i was thinking it would be something that he would have to travel for , maybe nasi lemak / laksa, but i was thinking that will probably be too basic for alderic. Something vietnamese, bahn mi. Or thai, tom yum. If he had the budget for it maybe korean or even further away for shepherd pie. But then again, most singaporeans may not like those items. Looking forward to the next series.

The effort to go to Japan to get ramen is a+ . Just somethings I think can improve the ramen as a whole , Noodles made and cooked on the same day . Aromatics added to tonkotsu to cook after taking out the bones and blending it. I saw like never flouring noodles for low hydration noodles not sure about high hydration , but flouring adds undesired textured and 40 percent hydration should be fine Kansui can be made with a mixture of potassium carbonate and sodium carbonate to reach a balance of texture and taste , baked sodium carbonate is good for a start but never a means to an end Tonkotsu creaminess can be improved with immersion blender . Chashu and egg done as desired it’s a plus But overall still better than my version Do best pasta in Singapore next ! One of the better channel to watch to make ramen although he never update for 2 years is way of ramen

thank you so much for the input! I read that it's better to let the noodles chill for a day before using them. Although I did so, I'm not very convinced it did anything. and you're right, the noodles actually seemed pretty alright even without dusting. I just got a little too insecure.

having made the ramen noodles itself before , i can say its totally not worth the effort holy cow, the amount of strength and patience needed to knead the dough given its 40% hydration and its DRY AF AND U DONT KNOW WHEN ISIT COMING TOGETHER, and i was using my FEET AT SOME POINT IN TIME TO PRESS ON THE DOUGH IN A ZIPLOCK BAG.

Alderic, my brother in ramen, why did you go with tonkotsu ramen 💀 Its so labor intensive and it is not straightforward at all. I actually thought you would go for a more reasonably achievable paitan chicken ramen with a more refreshing palate than compete with tonkotsu in flavor. I guessed wrongly

@@Alderic. would be so good if you went with a normal chick stock broth and use that chicken oil as tare. For more flair for the video, maybe puree chicken liver and make a condiment out of it, it should make the lighter tasting broth richer. Chicken rice inspired ramen anyone? 🤭
