I had the exact same menu and while loved a lot of the dishes, our views on the last dessert is incredibly different. While you called it your favorite, both my wife and I hated it. A bitter, gooey slime coated our mouths after that dish and didn’t go away until brushing our teeth three times. It was by far the worst dessert I have ever tried in my life. As an aside, I see that your enthusiasm for food is evident. That said, your couture, jewellery, etc., all speak of someone who has not come from a hospitality background. To hear the backstory about what your occupation was and what led you to want to invest in your eatery and to fund world travel to explore higher-end dining would be interesting. As a chef of thirty years who has worked in that world, more often than not, most of the clientele are not fellow workers within the industry but people who have worked vastly different roles and positions, and yet here they are with the same conviction towards food, even though they never explored as a worker, but as the diner.

I don't know if I will be able to visit such restaurants one day but it is a pleasure to discover them through these reviews, there is a form of rigor and demand but without being obtuse and closed to creativity, all aspects of the experience is highlighted, whether it is the cuisine obviously but also the service (we feel a large part of psychology and empathy to have the perfect balance) the design, all these ingredients which contribute to the experience of this who does the best

Great video and new subscriber! The thing I appreciate in particular, relative to other "Food KZbinrs", is the thoughtful description and reaction to the food. It seems most KZbinrs simply rely on "oohhing" and "aahing" and telling the viewer that something is "AMAZING!" It's clear they don't have particularly sophisticated palate or the ability to articulate what they are eating. I've only seen 2 of Alexander's videos (more to come!), but his articulation of the taste profiles with a full description of the ingredients and his honest reaction are sorely needed on KZbin. The videos have been much more informative and help paint a better picture of the dining and tasting experience. Regarding Noma, I can see why a lot of comments note how innovative the cuisine is at Noma, but generally speaking, it seems people don't leave the experience naming it their favorite restaurant. To me, it looks like a science experiment and a "mission" first, with the culinary enjoyment being tertiary. Frankly, nothing looked particularly appetizing and Alexander didn't seem to enjoy the meal that much. His reaction aligns with how most of it looked. I've been to my share of 3 Michelin starred restaurants, including Per Se, Le Bernadin and Eleven Madison Park (I'm from NY, obviously), but they don't sacrifice flavor for experimentation. They manage to meld the two into an innovative whole. Noma's motto seems to be, "we're going to give you some weird shit we concocted in the lab that utilizes the best ingredients of Denmark. Hope it tastes OK!" That approach obviously has its adherents, but I don't think it strikes the right balance for the diner.
